Mediterranean Chickpea Salad

toss all ingredients
- two 15 oz cans chickpeas (rinsed)
- 2 diced tomatoes
- 1/2 cup crumbled feta cheese
- 1/2 cup chopped kalamata olives
- 1/4 cup chopped parsley
- 1/4 cup chopped mint
- 6 tbsp olive oil
- 3 tbsp red wine vinegar
- salt & pepper
Lemon Pound Cake

I did the cake exactly as it said minus the sifting and used a bundt pan instead of an angel food cake pan
- Glaze:
- 1 Cup of butter/margarine (2 sticks)
- 1 Cup of Vegetable Shortening (aka Crisco)
- 3 Cups of Sugar
- 6 Large Eggs
- 1 Cup of Evaporated Milk
- 3 1/2 Cups All Purpose Flour
- 1 teaspoon of Baking Powder
- 1/2 teaspoon of salt
- 1 Tablespoon of Vanilla Extract
- 3 Tablespoons of Lemon Extract (or whatever extract you're gonna use)
- 2 Cups of Powdered Sugar
- 2 Fresh Lemons (or 2 Tablespoons of concentrated lemon juice and a bit of water)
One-Dish Chicken Bake

Mix stuffing, water & butter, set aside
- 1 pkg. Stuffing Mix
- 1 1/2 cups hot water
- 1/4 cup butter
- 6 chicken breasts (boneless/skinless)
- 1 pkg. mixed veggies
- 1 can cream of mushroom soup
- 1/3 cup sour cream
Banana Peanut Butter Bread

In honor of National Peanut Butter Lover’s Month, we bring you this easy, healthy and delish peanut butter recipe
- GLAZE:
- 1 1/2 cups mashed ripe banana
- 1/3 cup plain nonfat Greek yogurt
- 1/3 cup creamy peanut butter
- 3 tablespoons light butter, melted
- 2 large eggs
- 1/2 cup coconut palm sugar or regular white sugar
- 1/2 cup packed brown sugar
- 6.75 ounces all-purpose flour (about 1-1/2 cups)
- 1/4 cup ground flaxseed
- 3/4 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground allspice
- Cooking spray
- 1/3 cup powdered sugar
- 1 tablespoon vanilla almond milk
- 1 tablespoon creamy peanut butter
Easy Potatoes in Foil

Preheat oven to 400 degrees F
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Juice of 1 lemon
- Kosher salt and freshly ground black pepper, to taste
- 2 pounds baby red potatoes, halved
- 2 tablespoons chopped chives

Combine the butter, lemon juice, vanilla, and confectioner's sugar and beat until light and fluffy
- 1/2 cup butter
- 2 tablespoons lemon juice
- 1/2 teaspoon vanilla extract
- 3 cups confectioners' sugar
Pan Seared Steak

*Note-- for a deeper beef flavor, you can dry age the steaks for up to 2 days in the refrigerator
- 2 boneless strip steaks (1 1/2 to 1 3/4-inch thick), about 1 pound each
- Kosher salt and freshly ground black pepper
- 2 Tablespoons canola oil
- 1 large garlic clove peeled and sliced in half
Oven Roasted Potato Wedges

- 4 medium russet potatoes, washed
- 2 Tbsp olive oil
- 1 1/2 tsp kosher salt

Tuscan Pasta With Tomato-Basil Cream

1. Prepare pasta according to package directions
- 1 (20-oz.) package refrigerated four-cheese ravioli
- 1 (16-oz.) jar sun-dried tomato Alfredo sauce
- 2 tablespoons white wine
- 2 medium-size fresh tomatoes, chopped
- 1/2 cup chopped fresh basil
- 1/3 cup grated Parmesan cheese
- Garnish: fresh basil strips
