Scotch Shortbread Cookies

- 1/2 C 10x sugar
- 1 C butter

One Dish Chicken & Rice Bake

- 1 can ( 10 3/4 oz) Campbells creacm of mushroom soup
- 1 C water ( for creamier rice increase to 1 1/3 C )
- 3/4 C uncooked white rice ( regular)
- 1/4 t paprika
- 1/4 t pepper
- 4 skinless, boneless chicken breast halves
Grilled Mango Chicken

Brush chicken with olive oil & season with salt & pepper
- 4 chicken breasts
- extra virgin olive oil

- 1/2 C mango - peach jam
- 2 T soy sauce
- 1 t lime juice
- 1 t peeled, grated ginger
- 1/2 small jalapeño, seeded & minced

- 1 1/2 C graham cracker crumbs
- 1/4 C sugar
- 1/3 C melted butter
- 1 pkg (8oz) cream cheese, softened
- 1/4 C sugar

- 1 container (8oz) cool whip
- 2 pkgs (4 serving) instant choc pudding
- 3 1/2 C cold milk
Chocolate Mousse Torte

Heat oven to 350*. Grease bottom only of a 9" spring form pan
- 1 box fudge brownie mix
- 1/4 C veg oil
- 1/4 C water
- 1 egg
- 2 bags ( 11.5 oz each) or 1 lg bag semisweet chocolate chips
- 2 C chopped pecans
- 1/4 C toffee bits
- 1 pkg ( 8oz) cream cheese ( softened)
- 1/2 C 10 x sugar
- 1 t vanilla
- 1 pint whipping cream
Sicillian Meat Roll

In a large mixing bowl combine the eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper, & garlic
- 2 slightly beaten eggs
- 1 clove garlic, minced
- 3/4 C soft bread crumbs ( 1 slice)
- 1/2 C tomato juice
- 2 T snipped parsley
- 1/2 t dried oregano, crushed
- 1/4 t salt
- 1/4 t pepper
- 1 clove garlic, minced
- 2 lbs ground beef (90% lean)
- 1/2 C shredded mozzarella cheese (6oz)
- 3 slices (4x4 " each) mozzarella cheese, halved diagonally
Lemon Pepper Salad Dressing

Combine all ingrdients & mix well

Beat butter. Add sugar, then eggs
- 5 eggs
- 2 C sugar
- 3 C flour
- 1 lb butter( 1C)
- 3 t baking powder
- 1 t vanilla pinch of salt

- 1 orange cake mix ( box)
- 1 sm pkg orange jello( 1C hot water , 1/2 C cold water)
- 1 sm pkg instant vanilla pudding (1 C milk)
- 1 t orange extract
- 1 container cool whip (8 oz)
- 1 t vanilla
