Pineapple Upsidedown Cake

- can of pineapple slices ( save juice)
- 1 lb light brown sugar ( or less)
- marashino cherries
- 1 stick butter( or less)

Mix butter, sugar(1 1/2 C) & eggs
- 1 C butter
- 1 1/2 C sugar ( plus 2 T sugar)
- 2 eggs
- 2 3/4 C flour
- 1 t baking soda
- 2 t cream of tartar
- 2 t salt
- 2 t cinnamon
Cream Cheese Icing

- 1 C (2 sticks) butter
- 1 (6oz) cream cheese, softened
- 2 lb (8 C) 10x sugar
- 2 T milk
- do not use light cream cheese or butter substitute
New York Cheesecake

Preheat oven to 400*. In a bowl, place graham cracker crumbs, butter & 2 T sugar; blend well
- 2 C graham cracker crumbs
- 1/2 C (1 stick) butter melted
- 1 C sugar, divided
- 2 lbs cream cheese (5 - 8 oz packs)
- 2 large eggs, lightly beaten
- 1 t vanilla
- 2 T cornstarch
- 1 C sour cream (8 oz)
Fiesta Cheese Rice

In a bowl, combine the rice, water, tomatoes & bouillon; mix well
- 3 C uncooked instant rice
- 3 C water
- 1 can (10oz) diced tomatoes with green chillies, undrained
- 1 T chicken bouillon granules
- 3/4 C sour cream
- 1 1/2 C (6oz) shredded cheddar cheese, divided
