Perfect Chocolate Cake

- Frosting:
- 1 C cocoa
- 2 C boiling water
- 2 3/4 C flour
- 2 t baking soda
- 1/2 t salt
- 1/2 t baking powder
- 1 C butter, softened
- 2 1/2 C sugar
- 4 eggs
- 1 1/2 t vanilla
- 1 pkg (6 oz) semisweet chocolate pieces
- 1/2 C light cream
- 1 C butter
- 2 1/2 C 10x sugar
- Filling:
- 1 C heavy cream ( chilled)
- 1/4 C 10x sugar
- 1 t vanilla
Philly Cheesecake Brownies

Prepare mix as directed. Pour into 9 x 13" pan
- 1 pkg ( 19.8 oz) fudge brownie mix
- 1 pkg (8 oz) cream cheese, softened
- 1/3 C sugar
- 1 egg
- 1/2 t vanilla
Individual Beef Wellingtons with Madeira Sauce

1. Line 2 rimmed baking sheets with foil ( for easy clean up)
- Mushroom Layer
- 1 lb mushrooms
- 2 Tbsp stick butter
- 3/4 C finely chopped onion
- 1/4 tsp each salt & pepper
- 3 lb center- cut beef tenderloin, visible fat trimmed, strings removed if tied
- 1 box ( 17.3 oz) frozen puff pastry sheets, thawed
- 1 lg egg, beaten with fork
- Garnish: fresh herb sprigs, tied in a bunch
- Madeira Sauce
- 2 lb beef bones ( ask at meat counter)
- 3 cans ( 14 oz each) beef broth (5 cups)
- 3 Tbsp stick butter
- 1/3 C all purpose flour
- 1/2 C dry Madeira wine
- 1 Tbsp fresh thyme leaves (optional)
- Browning & seasoning sauce ( such as Kitchen Bouquet or Gravy Master)

- 1/2 C crisco
- 3/4 C creamy peanut butter
- 1 1/4 C firmly packed light brown sugar
- 3 T milk
- 1 T vanilla

Peanut Butter Cups

1.In a small glass bowl, heat half of the chocolate in the microwave for 30-60 seconds
- 16 oz semi-sweet or milk chocolate, chopped ( or use chips)
- 2 T unsalted butter, room temperature
- 1/3 C confectioners sugar
- 1/2 C creamy peanut butter
Classic Candy Apples

- 12 medium apples
- 2 C sugar
- 1-2/3 C light corn syrup
- red food coloring
- toppings as desired: sprinkles, nuts, candy, etc.

Method: Heat oven to 350 degrees
- For the Chocolate Cupcakes:
- 3/4 C flour
- 1/3 C cocoa powder
- 3/4 t baking soda
- 1/2 t salt
- 1/2 C plus 2 T granulated sugar
- 1/2 C buttermilk
- 1/3 C vegetable oil
- 1 large egg
- 1 t pure vanilla extract
- For the Peanut Butter Buttercream:
- 1/2 C granulated sugar
- 2 large eggs
- 1/8 t salt
- 12 T softened unsalted butter, cut into 1/2" pieces
- 1 C peanut butter
- 2 t pure vanilla extract
- For the Chocolate Coating:
- 8 ounces semi-sweet chocolate, finely chopped
- 1 1/2 T vegetable oil

- 2 pkg (8oz) cream cheese, softened
- 1/2 C sugar
- 1/2 C vanilla
- 2 eggs
- 4 squares (4 oz) bakers premium white baking chocolate, chopped, divided (2/3 C) or 2/3 C white chocolate chips, divided
- 1 ready to use chocolate flavor crumb crust(6oz or 9")
