Pina Colada Smoothie

Instructions Add all ingredients to a blender
- 1 1/2 cups coconut milk
- 1 cup pineapple juice
- 2 cups frozen pineapple chunks
- 6 oz coconut yogurt
- 1/3-2/3 cups quick oats (I usually use a little over 1/3 sometimes more)
- 2 bananas (frozen makes for best great texture)

- 3 3/4 cups water
- 2 cups rice (1 cup long-grain brown rice and 1 cup wild rice)
- 3 tablespoons butter
- 1/2 cup diced onions
- 1/2 cup diced celery
- 1/2 cup diced carrots
- 1/2 red bell pepper
- Salt and freshly ground black pepper

Joys Lasagna Soup

Very good on a cool day! This is going to be our “new” New Years Eve meal tradition! It is delicious!
- 1 pound of Italian sausage 1/2 hot and 1/2 Mild Italian
- 2 cups of diced onions
- 1/2 cup sliced celery
- 1 cup of diced or shreded carrots
- 5 cloves of garlic, minced
- 1/4 t crushed red pepper flakes
- 1/2 t dried oregano
- 1/2 t dried basil
- 4 cups of chicken broth
- 2 (14oz) cans of diced or crushed tomatoes
- 1 (14oz) can of tomato sauce
- 1 1/2 cup of dried Campanelle pasta
- 2 cups fresh spinach or 1 cup frozen spinach (drained)
- 1 pint of Ricotta Cheese
- 12 oz. Provolone/Mozzarella cheese (shredded)
- 1/2 cup Fresh Basil leaves rolled and sliced into thin strips

- 1 - 500g pkg of Sempio wheat noodles
- 1/2 cup Canola Oil
- 1/2 cup Sesame Oil
- 6 Tbl Brown Sugar
- 2 Tbl Tabasco Sauce - (I use 1 tsp)
- 1/2 cup Rice Wine Vinegar
- 1/2 cup Soy Sauce
- 1/2 tsp SamBal Sauce – (I use 1/4 tsp)
- 1 1/2 tsp Cayenne Pepper - (I use 1/2 tsp)
- 2 Shredded Carrots
- 3 Green onions finely chopped
- 1 sm can Water Chestnuts, coarsely chopped (optional)
