Toffee-Doodles

Yummy combination of Toffee bits and Snickerdoodles
- COOKIES:
- 1/2 cup butter, unsalted
- 1/2 cup butter flavored shortening (Crisco)
- 1 1/4 cup sugar
- 2 large Eggs
- 3 cups all-purpose flour, sifted
- 2 teaspoons cream of tartar (sift with flour)
- 1 teaspoon baking soda (sift with flour)
- 1/4 teaspoon fine salt (sift with flour)
- 3/4 to 1 cup of Toffee bits, (I used homemade toffee)
- SUGAR COATING:
- 1/3 cup sugar
- 2 1/2 teaspoons cinnamon
Mom's Mashed Potatoes

I added bacon bits and chives to this recipe to brighten it up a bit
- 4-5 medium red potatoes, cubed
- 3 cloves garlic, quartered
- 1/2 cup butter
- Salt and pepper, to taste
- 2 Tablespoons milk
- Additional butter, as needed (2-4 Tbsp)
- 2 oz. cream cheese
- 3 Tablespoons fresh bacon bits
- 3 tablespoons minced chives

- 3 tsp flour
- 1/2 cup onions, chopped

- 1 egg yolk, beaten

- 1 teaspoon (or more) of bacon fat (or 1 strip of bacon, cooked and minced) optional
- 1 teaspoon of chipotle powder, Tabasco chipotle sauce, or adobo sauce, more to taste (or plain chili powder to taste)
- 1/4 to 1/2 teaspoon ground cumin
- Salt
- 1 cup shredded cheddar or Monterey Jack cheese
