Lemon Blossom

Preheat the oven to 350 degrees F
- Glaze:
- 18 1/2-oz. pkg. yellow cake mix
- 3 1/2-oz. pkg. instant lemon pudding mix
- 4 large eggs
- 3/4 c. vegetable oil
- 4 c. confectioners’ sugar
- 1/3 c. fresh lemon juice
- Zest of 1 lemon
- 3 tbsp. vegetable oil
- 3 tbsp. water

Melt oleo in cake pan add remaining ingredients in order given
- 1/4 lb. oleo
- 1 c. crumbled Graham cookies
- 1 c. coconut
- 1 c. Chocolate chips
- 1 c. butterscotch chips
- 1/2 c. pecans
- 1 c. eagle brand milk
Bourbon Pecan Chicken

Stir together the pecans, bread crumbs, and 2 tablespoons of butter
- 1/2 c. finely chopped pecans
- 1/2 c. dry bread crumbs
- 8 skinless, boneless chicken breast halves
- 1/4 c. butter, melted
- 1/4 c. Dijon mustard
- 1/4 c. dark brown sugar
- 2 2/3 Tbsp. bourbon whiskey
- 2 Tbsp. soy sauce
- 1 tsp. Worcestershire sauce
- 3/4 c. unsalted butter, chilled and cut into small cubes
- 1/2 c. sliced green onions
Fresh Salsa

Drain tomatoes. Add garlic, onion salt, vinegar and sugar
- 2 (28 oz.) Diced tomatoes
- 2 tsp. garlic powder
- 3 tsp. onion salt
- 2 tsp. sugar
- 4 tbsp. vinegar
- 1 whole onion - chopped
- 2 green pepper - chopped
- 1 jalapeno - chopped
- 1 lime squeezed
- cilantro
Blueberry Stuffed French Toast With Blueberry Sauce

The night before serving, spray a 13 x 9-inch glass baking dish with nonstick cooking spray
- Blueberry sauce:
- 12 slices whole wheat bread
- 1 pkg. (8 oz.) cream cheese
- 1 c. blueberries, fresh or frozen, thawed
- 12 eggs
- 1/3 c. maple syrup or honey
- 2 c. milk
- 1 c. sugar
- 2 tbsp. cornstarch
- 1 c. water
- 1 c. blueberries, fresh or frozen, thawed
- 2 tbsp. butter
Italian Seasoning

Combine all of the ingredients in a bowl, using your spoon grind all ingredients together
- 3 tsp. sweet basil
- 1/2 tsp. ground oregano
- 1 tsp. rosemary
- 1 tsp. garlic salt
- 1/4 tsp. garlic powder
- 1/4 tsp. cayenne pepper
- 1/4 tsp. ground white pepper
Pumpkin Bread

Sift dry ingredients - add remaining ingredients
- 3 1/3 c. sifted flour
- 2 tsp. soda
- 1 1/2 tsp. salt
- 1 tsp. cinnamon or 2 tsp. pumpkin spice
- 1 tsp. nutmeg
- 1 c. melted shortening
- 4 eggs
- 2/3 c. water
- 2 c. canned
- 1 pumpkin
- 3 c. sugar
Chicken Pot Pie

Preheat oven to 400 degrees
- 2 c. chicken tenderloins, uncooked
- 1 c. broccoli, tops only
- 1/2 c. carrots, cubed
- 1/2 c. celery, cubed
- 1/4 c. leeks, diced
- 3 tbsp. butter
- 3 tbsp. flour
- 3 c. milk or half and half
- 1 c. Parmesan cheese, grated
- 2 chicken bouillon cubes
- pastry dough for a single pie
- 1 egg, beaten
Spinach, Apple and Cheddar Cheese Salad

Combine vinegar, maple syrup and oil in small bowl; wisk to blend
- Dressing:
- 2 (6 oz) packages baby spinach leaves
- 2 large unpeeled Granny Smith apples, halved, cored and thinly sliced
- 8 ounces extra sharp cheedar cheese, cut into 1/2 inch cubes
- 1/2 cup chopped toasted walnuts
- 1/4 cup balsamic vinegar
- 1/4 cup pure maple syrup
- 1/4 cup olive oil
