Sauerkraut

Peel off outer leaves of cabbage and set aside
- 8-10 heads of cabbage
- 3 T salt
- 5 gallon crock
Bagel Dip

Mix and chill. Cut up bagels into bite size pieces and serve
- 1 pint sour cream
- 1 pint mayo
- 4 pkg. dried beef- Chopped
- 1 small onion- Chopped
- 2 tsp. dill weed
- 2 tsp. accent

Pumpkin and Cream Cheese Muffins

Mix cream cheese, 1 egg, and 3 tablespoon sugar in small bowl and set aside
- 8 oz. cream cheese
- 3 eggs
- 2 1/2 c. sugar
- 2 1/2 c. flour
- 1/4 c. pecans
- 3 tbsp. melted butter
- 2 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1 1/4 c. pumpkin
- 1/3 c. vegetable oil
- 1/2 tsp. vanilla
Southside Spaghetti and Meatballs

Meatballs: Mix the beef and pork together
- Meatballs:
- 1 lb ground beef
- 1 lb ground pork
- 1 cup dry bread crumbs
- 1 cup wet bread crumbs (make by sprinkling water over dry crumbs and squeezing water out)
- 3/4 cup Romano cheese
- 1/2 tsp salt
- 1 1/2 tsp garlic powder
- 2 tsp black pepper
- 2 cloves garlic (use garlic press)
- 2 T flat leaf parsley
- 3 eggs, beaten
- Spaghetti Sauce:
- 2 cloves garlic
- olive oil
- 24 ounces tomato paste
- 12 ounces tomato puree
- 3 bay leaves
- 2 springs fresh basil
- 1/4 tsp salt
- 2 tsp garlic powder
- 2 tsp black pepper
- 2 tsp oregano
- 1 T grated Romano cheese
- 1/4 tsp crushed red pepper
Dried Beef Cheese Ball

Mix and form into 3 balls - refrigerate then roll in pecans
- 2 - 8 oz. pkg. cream cheese
- 8 oz. pkg. shredded cheddar cheese
- 1 tbsp. minced onion
- 1 tbsp. chopped pimento
- 1 small jar dried beef
- 1 c. butter
- 1 lb. Velveeta (room temp.)
- 1 tsp. horseradish
- 1 cup pecans
Garden Pasta

Cook pasta according to directions on the package
- 1 tbsp. olive oil
- 1 1/2 c. red onions, cut in strips
- 2 large cloves garlic, minced
- 1 lb. spiced sausage, crumbled
- 1 lb. Penne pasta
- 1 c. dry white wine
- 2 large fresh tomatoes, cored and chopped
- 1 c. zucchini, cut in 1/4-inch slices
- 1/2 c. basil leaves, snipped in small pieces
- kosher salt
- freshly ground black pepper
- freshly grated Parmesan cheese
Raisin Bread

Pour boiling water over raisins and allow to sit
- 1 1/2 c. boiling water over 2 c. raisins
- 1 c. sugar
- 1 tbsp. butter
- 1 egg
- 2 tsp. vanilla
- 2 3/4 c. flour
- 1 tsp. baking powder
- 2 tsp. soda
- 1 tsp. salt
- 1/2 c. nuts
Mr. K's Potato Salad

Bake potatoes cool thoroughly peel skin off and diced into small cubes
- 15 baked potatoes (baked and cooled)
- 12 eggs boiled, separate out yolks
- 1 jar (32 oz.) Miracle Whip
- 1/2 c. sugar
- 2 tsp. salt
- 2 tsp. vinegar
- 1/4 cup dry minced onion
- 7 up- a couple of swigs
- Mustard for color

- 1 cup semisweet chocolate chips
- 1 ounce unsweetened chocolate, chopped
- 1/4 cup freshly brewed coffee
- 1 tsp instant coffee powder
- 1/4 cup Grand Marnier liqueur
- 1 T Brandy
- 1 tsp pure vanilla extract
- 1 1/2 sticks unsalted butter, diced, at room temp
- 8 extra large eggs plus 2 T, divided
- Kosher salt
- 1/2 cup cold heavy cream
Bloody Mary's

Pour 1/3 of the V-8 juice into another container
- Bottle of V8 juice
- 1 tsp. Worcestershire sauce
- 25-30 shakes Tabasco
- 3-4 shakes salt
- 1 tsp pepper
- 10 dashes of celery salt
- generous amount of horseradish
- 1/2 fresh lime or lemon juice
