Caesar Salad Parmesan Cups

Sometimes simple recipes can produce elegant results
- 3 oz Parmesan cheese, grated (freshly grated from a block, not the kind that comes in a can – use the small-hole side of a box cheese grater to grate your own)
- 3 T fat free plain Greek yogurt
- 1 1/2 t fresh lemon juice
- 1 1/2 t extra virgin olive oil
- 1 t red wine vinegar
- 1 t Worcestershire sauce
- 1/2 t anchovy paste (omit if making this vegetarian)
- 1/2 t Dijon mustard
- 1/4 t black pepper
- 1 small garlic clove, minced
- 4 cups chopped Romaine lettuce
Monster Munch

Pop popcorn and place in a large bowl
- 1 package Almond Bark (1 lb)
- 2 bags of microwave popcorn, popped (approximately 16-20 C popped popcorn)
- 1 C candy corn
- 1 1/2 C dry roasted, salted peanuts
- 1 C Reeces Pieces
Filet Mignon with Morel Cream Sauce

Directions In a large pan, heat canola oil over high heat until very hot
- 3 tablespoons canola oil
- 4 (8 ounce) beef filet mignon
- 1 tablespoon butter
- 1 pound morel mushrooms
- 1 small shallot, finely minced
- 3/4 cup heavy cream
- fine sea salt and freshly
- ground black pepper to taste
Goat Cheese Phyllo Purses

Elegant phyllo purses filled with tangy goat cheese and bacon
- 5 oz goat cheese, softened
- 2 Tbsp chives, chopped
- 4 slices of pancetta or bacon, cooked to a crisp (prosciutto is good, it's just not crispy)
- black pepper
- 6 sheets of phyllo dough
- 6-8 Tbsp of melted butter
- Chives or strips of the tops of green onions for tying

- 2 pounds beef chuck roast, trimmed of excess fat
- 1 teaspoon black pepper
- 1 teaspoon kosher salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 large onion, thickly sliced
- 1 (14-ounce) can beef broth
- 6 tomatillos, remove papery layer and rinse off
- 1/2 cup cilantro, rinsed and dried
- 1 garlic clove, peeled
- 1/2 teaspoon kosher salt
- salt and pepper, to taste
- tortillas
- taco toppings of your choice: shredded cheese, sour cream, lime, cilantro, tomato, lettuce

Peel potatoes and rinse them
- 2 pounds Idaho Potatoes
- 3 Tablespoons Salted Butter
- 4 ounces, weight Cream Cheese
- 1 cup Whole Milk
- Salt And Pepper, to taste
Cherry-Apple Pie with Oatmeal Crumb Topping

Preheat oven to 400°F. Line a 9 or 10-inch baking dish with the pie crust
- For the Filling:
- 1 unbaked pie crust for a 9 or 10-inch deep dish baking pan
- 2 cups fresh or frozen pitted cherries
- 1 cup sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- zest of one orange
- 3 cups peeled, cored and thinly sliced apples
- For the Topping:
- 1 cup rolled oats
- 1/2 cup packed light brown sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 6 tablespoons all-purpose flour
- 8 tablespoons or one stick unsalted butter, room temperature, cut into pieces
Leftover Turkey Spring Rolls

A unique and creative way to use that leftover turkey after Thanksgiving
- 50 rice paper wrappers
- 2 cups turkey, chopped
- 5 tablespoons soy sauce
- 1/4 cup rice wine vinegar
- 1 teaspoon sesame oil
- Cilantro, chopped
- 1 pound carrots, finely diced
- 2 cucumbers, cut into matchsticks
- 3 cups leafy lettuce
- Alfalfa or bean sprouts, to taste
- 1 (8.8-ounces) package cellophane noodles
- Seasonings, to your taste
Homemade Caramels

- 2 cups white sugar
- 1 cup packed brown sugar
- 1 cup corn syrup
- 1 cup evaporated milk
- 1 pint (2 cups) heavy whipping cream
- 1 cup butter
- 1 1/4 teaspoons vanilla extract

- 3/4 tsp salt
- One egg
- 1/4 cup milk

- 1 cup whole pitted dates, chopped into small pieces
- 1/2 cup sugar
- 1/4 cup water
