Carmelized Squash Salad with Pistachios and Goat Cheese

1. For marinade, in a small bowl stir together orange juice, maple syrup, mustard, and ginger
- 1 cup orange juice
- 3 Tbsp. maple syrup
- 1 1/2 Tbsp. Dijon mustard
- 1 Tbsp. grated fresh ginger (1 tsp. or so dried can do in a pinch)
- 1 1/2 lb squash (I used delicata), peeled (not necessary with delicata), seeded, halved lengthwise, and cut into 1/2 inch wide strips
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 1/3 cup olive oil
- 6-8 cups mixed greens (I used organic spring mix) or whatever amount looks right
- 1/2 cup roasted salted pistachio nuts
- 3 oz goat cheese (can substitute feta if you must)!

- 3 cups (710) ml) low sodium, organic chicken broth (or use vegetable broth for vegetarian/vegan style)

- 1 medium head (about 2 to 2 1/4 pounds) cauliflower
- 4 tablespoons (55 grams or 2 ounces) unsalted butter
- 4 tablespoons (30 grams or 1 ounce) all-purpose flour
- 2 teaspoons mustard powder
- Salt, to taste
- Freshly ground black pepper or ground cayenne
- 2 cups (475 ml) milk, whole is best but low-fat will probably work just fine
- 1 1/4 cups plus 2 tablespoons (about 155 grams or 5 1/2 ounces total) grated cheddar, the strongest you can get, preferably English or Irish
- Chopped chives or flat-leaf parsley, for garnish (optional)

- Sauce:
- 1 1 1 tablespoon garlic flavoured oil
- 1 1 1 onion, peeled and chopped
- 1 1 1 red bell pepper, seeded and chopped
- 2 2 2 green chiles, chopped, with seeds
- 1 1 1/2 teaspoon kosher salt or 1/2 teaspoon table salt
- 2 2 2 tablespoons finely chopped cilantro stalks
- 2 2 1 2/3 to to diced tomatoes, plus 1 2/3 cups water to rinse out empty cans (may only need to half the water if mixture seems runny)
- 1 1 1 tablespoon ketchup
- 1 added 1 lb. of cooked, ground turkey
- Filling:
- 2 2 cans 2 (15-ounce) cans black beans, drained and rinsed
- 3 1/4 3 1/4 1 1/2 drained canned corn, from about 1 1/2 (15-ounce cans)
- 2 1/2 2 1/2 1/2 cups grated mature goats Cheddar, or cheese of your choice
- 8 8 10-inch soft flour tortillas (approximately 10-inch diameter)
