- 4 cups of cooked black-eyed peas (2 15-ounce cans, rinsed and drained)
- 8 green onions, just the green parts thinly sliced
- 1/2 cup chopped cilantro
- 3 jalapehile peppers, stems and seeds removed (wear gloves! do not touch your eyes after handling them!), finely chopped
- 2 plum tomatoes, diced, or 1/2 cup of canned diced tomatoes, drained
- 1 yellow bell pepper, seeds and stem removed, diced
- 3 cloves garlic, minced
- 2 Tbsp olive oil
- 2 Tbsp lime juice
- 1 teaspoon ground cumin
- Salt and black pepper, to taste
Brown Butter Tilapia with Basil Butter Breadcrumbs

Add breadcrumbs to a small saucepan over medium heat and toast until golden, about 3-4 minutes
- 4 fresh tilapia filets
- 1 1/2 tablespoons coconut oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

- 1/3 cup panko bread crumbs
- 1 garlic clove, minced or pressed

Dried Cherries, Pecans & Rosemary Brie en Croute

Directions Heat the oven to 400°F
- 1 egg
- 1 tbsp. water
- 1/3 cup dried cherries, softened
- 1/4 cup chopped toasted pecans
- 1/4 cup honey
- 1/2 tsp. chopped fresh rosemary leaves

Cheesy Mushroom Pull Apart Bread

Instructions For the Mushrooms Heat a medium skillet on medium
- 12 oz sliced mushrooms
- 1 Tbsp butter
- 1 Tbsp chopped fresh thyme
- 1 unsliced loaf sourdough bread
- 12 ounces Provolone cheese, thinly sliced
- 1/2 cup butter, melted
- 1/2 cup finely diced green onion
- 2 teaspoons poppy seeds
Chile-Rubbed Chicken Breast with Kale, Quinoa and Brussels Sprouts Salad

Bring 2 cups water to a boil in a small saucepan
- 1 cup dried quinoa
- Kosher salt and freshly ground black pepper
- 1/2 cup plus 3 tablespoons extra-virgin olive oil
- 1 teaspoon ground chipotle powder
- 1 teaspoon chopped fresh oregano
- 2 small garlic cloves, grated on a rasp, separated
- 4 skinless, boneless chicken breast halves
- 1/4 cup freshly squeezed lemon juice
- 2 tablespoons Dijon mustard
- 1 tablespoon minced shallot (from about 1/2 small)
- 2 large bunches kale, center stems removed and leaves thinly sliced crosswise (about 1 1/2 pounds total)
- 12 ounces Brussels sprouts, trimmed and cored, finely grated or shredded with a knife
- 1/2 cup toasted almonds, chopped (about 2 ounces)
- 1 cup crumbled Cotija cheese (about 4 ounces)
Penne with Spinach, Feta, and Olives

This dish has a lot of strong flavors which give you a "pow" in every bite
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- 3 garlic cloves, crushed
- 6 cups hot cooked penne (about 12 ounces uncooked tube-shaped pasta)
- 2 cups chopped spinach
- 1/4 cup chopped pitted kalamata olives
- 2 tablespoons capers
- 3/4 cup (3 ounces) crumbled feta cheese

1. Make the Pie Crust: Place the flour, sugar, and salt in a food processor and pulse a few times to combine
- INGREDIENTS:
- For the Pie Crust:
- 1 1/4 cups all-purpose flour
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 4 tablespoons vegetable shortening, cut into small pieces and chilled
- 6 tablespoons unsalted butter, cut into small pieces and chilled
- 3 to 4 tablespoons ice water
- 1 egg white, lightly beaten
- For the Filling:
- 3/4 + 2 teaspoons cup granulated sugar, divided
- 1 tablespoon cornstarch
- 3/4 teaspoon salt
- 2 eggs
- 5 egg yolks
- 1 3/4 cups buttermilk
- 1/4 cup heavy cream
- 4 tablespoons unsalted butter, melted
- 2 teaspoons distilled white vinegar
- 1 1/2 teaspoons vanilla extract
Banana Cream Pie in a Jar

Mix the flour, sugar and salt together
- Meringue:
- {filling}
- 1/3 cup flour or 1/4 cup corn starch (I used corn starch)
- 2/3 cup sugar
- 1/4 teaspoon salt
- 2 cups milk, scalded
- 3 slightly beaten egg yolks (keep the whites for the meringue)
- 2 tablespoons butter
- 1/2 teaspoon vanilla
- 1-2 bananas, depending on taste
- 3 egg whites
- pinch cream of tartar
- 6 tablespoons sugar

Directions: Cream margarine and sugars until fluffy; add egg, milk and vanilla; beat well

- 1 cup margarine (softened)
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 egg
- 3 tbsp. milk
- 1 tsp. vanilla (Madagascar)
- 3 cups flour
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 2 cups chopped and pitted dates
- 1/3 cup sugar
- 1/4 tsp. salt
- 1/2 cup water
- 2 tbsp. lemon juice
