Pumpkin Lust Cake

First you need to run and grab some Pumpkin Spice Instant Pudding
- 1 stick butter, melted
- 1 cup flour
- 1 cup chopped pecans
- 2 tbs sugar
- 1 (8oz) package of cream chees, soft
- 1 cup powdered sugar
- 2 (8 oz) containers cool whip (or one 16 ozz container)
- 2 small packages (3.4oz) of Jello Instant Pumpkin Spice Pudding
- 3 cup cold milk
- Nutmeg for sprinkling
Bread Pudding with Hot Butter Rum Sauce

Ohhh-kay. This is one of my favorite breakfast recipes, ever ever ever
- 7-8 cups torn or cubed French bread
- 3/4 cup dark brown sugar
- 3 cups milk
- 4 tablespoons butter
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 2/3 cup raisins
- 1/4 cup rum, divided
- 4 beaten eggs
- 1/3 cup heavy cream
- 1 cup sugar
- 1/2 cup butter
Avocado Black Bean Corn Salsa

Instructions Add all the ingredients, except avocado, together and mix well
- 2 avocados – cubed
- 1 1/2 cups frozen organic corn, defrosted
- 1 1/2 cups black beans (15 oz can)
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- juice of 1 lime
- 2 garlic cloves, finely minced
- 1/2 jalapeno, finely minced
- 1 tsp salt
SLOW COOKER HAM AND MIXED BEAN SOUP

Instructions Place beans in slowcooker, cover with water
- 1 package 15 or 16 bean soup mix
- 1 lb. lean ham, with all visible fat trimmed
- 1 ham bone or ham hock
- 1 cup onion, chopped
- 1 15 oz. can diced or stewed tomatoes
- 1 tsp. chili powder
- 1 tsp. red pepper flakes (optional)
- Juice from 1 lemon
- 1-2 cloves minced garlic
- 6-8 cups water
- Salt and pepper to taste
Caprese Skewers with Balsamic Drizzle

- 1 cup balsamic vinegar
- cherry or grape tomatoes
- mini mozzarella cheese balls (could use regular sized ball, and cut into bite-sized pieces)

Hasselback Garlic Cheesy Bread

Everyone has seen the Hasselback Potato, right? Well this is a much more scandalous take on that
- 1 cup Warm Water
- 1 Tablespoon Honey
- 1 envelope Active Dry Yeast (2 1/4 Teaspoons)
- 1 teaspoon Salt
- 3 cups Bread Flour
- Olive Oil, For Greasing Surfaces
- 1/3 pounds Sharp White Cheddar, Or Any Other Cheese You Prefer
- 1/2 cups Garlic Herb Butter
Tex Wasabi's Koi Fish Tacos

Directions In medium bowl, combine lime juice, tequila, cumin, salt, and pepper; mix thoroughly

Parmesan Roasted Potato Wedges

So I roast the bad boys at 450 degrees for a good 45 minutes, with a few tosses here and there
- 3 lbs Yukon Gold Potatoes (or whatever you have)
- 1/4 cup olive oil
- 1/2 teaspoons salt
- 1/4 teaspoon pepper
- 1/2 teaspoon rosemary
- 1/2 teaspoon thyme
- 1 tablespoon parsley
- 1/4 cup parmesan cheese
