  • Sift together:
  • 4 large boneless chicken breasts
  • 2 cup flour
  • 4 tsp salt
  • 4 tsp black pepper
  • 3 tbsp ground ginger
  • 2 tbsp ground nutmeg
  • 2 tsp ground thyme
  • 2 tsp ground sage
  • 2 tbsp paprika
  • 1 tsp cayenne pepper
  • Egg Wash
  • 4 eggs
  • 8 tbsp water
  • Honey Garlic Sauce:
  • In a medium saucepan add
  • 2 tbsp olive oil
  • 3 – 4 cloves minced garlic
  • Cook over medium heat to soften the garlic but do not let it brown. Add:
  • 1 cup honey
  • 1/4 cup soya sauce (low sodium soya sauce is best)
  • 1 tsp ground black pepper
  • Simmer together for 5-10 minutes, remove from heat and allow to cool for a few minutes. Watch this carefully as it simmers because it can foam up over the pot very easily

  • 1/2 pound unsalted butter at room temperature, plus more for buttering loaf pan
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup yellow cornmeal
  • 1/2 teaspoon salt
  • 2 tablespoons finely minced fresh rosemary
  • Zest of 1 lemon
  • 1 cup sugar
  • 3 eggs, at room temperature
  • 2 tablespoons cognac (or any brandy)
  • Prepared plums (recipe below)
  • 6 large plums, pitted and cut into 6-8 wedges each
  • 1/3 cup sugar
  • Pinch of salt
  • 1 teaspoon finely grated lemon zest
  • 1 teaspoon finely minced fresh rosemary
  • 2 tablespoons cognac (or rum or any brandy)
  • In a medium saucepan, cook plums with sugar, salt, lemon zest and rosemary over medium heat until fruit is very soft but not falling apart, about 10 minutes. Remove from heat. Add cognac.
