In a small bowl, combine the thyme, rosemary, garlic, the 1 1/2 Tbs
- 2 Tbs. finely chopped fresh thyme (if not fresh 1/2 tbsp dried)
- 2 Tbs. finely chopped fresh rosemary (if not fresh 1/2 tbsp dried)
- 4 Tbs. minced garlic (5 cloves)
- 1 1/2 Tbs. sea salt, plus more, to taste
- Freshly ground pepper, to taste
- 1/4 cup olive oil
- 1 bone-in pork loin roast, about 5 lb.
- 12 oz. dried figs, halved
- 1 cup sweet vermouth or water, warmed
- 3/4 cup low-sodium chicken stock
- 2 Tbs. veal demi-glace
- 2 tsp. fig balsamic vinegar
- 4 Tbs. (1/2 stick) unsalted butter, at room temperature

- 4 skinless chicken breast halves, with ribs
- 2 skinless chicken thighs, with bones
- 1/2 teaspoon salt, plus 1 teaspoon
- 1/2 teaspoon freshly ground black pepper, plus 1 teaspoon
- 1/4 cup olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 ounces prosciutto, chopped
- 2 cloves garlic, chopped
- 1 (15-ounce) can diced tomatoes
- 1/2 cup white wine
- 1 tablespoon fresh thyme leaves
- 1 teaspoon fresh oregano leaves
- 1/2 cup chicken stock
- 2 tablespoons capers
- 1/4 cup chopped fresh flat-leaf parsley leaves
Sushi Rice

- 2 cups sushi or short grain rice
- 2 cups water, plus extra for rinsing rice
- 2 tablespoons rice vinegar

Italian Chicken Panini

- 8 slices levain or country-style bread
- Olive oil for brushing
- 1/2 cup ’wichcraft artichoke Parmesan pesto
- 1 roasted chicken, skin removed and meat shredded
- 2 roasted red bell peppers, cut into 1/4-inch slices
- 6 oz. fontina cheese, shredded
- 8 large fresh basil leaves

Italian Wedding Soup

Place all of the meatball ingredients in a large bowl and mix well
- FOR THE LITTLE MEATBALLS:
- 6 tablespoons of chicken base or 2 1/2 quarts of chicken stock or broth
- 1 small head of escarole, chopped
- 2 1/2 quarts of water
- 1 cup of uncooked Ditalini pasta
- 1 pound of lean ground beef.
- 1 clove garlic, finely chopped
- 2 tablespoons flat leaf parsley, finely chopped
- 2/3 cup dried plain bread crumbs
- 2 large eggs
- 4 ounces whole milk
- 2 ounces of grated romano cheese (about a cup)
- 1 small onion, grated
- 6 fresh basil leaves, chopped
- 1 teaspoon salt

Chicken Pot Pie Soup

based on 2.5 cups 1% 24 points whole pot, 4 cups milk 27 points based on 10 oz chicken weigh once cooked
- 1/4 cup flour (to make gluten-free use 2 tbsp cornstarch instead)
- 2 cups water
- 4 cups fat free milk (i used 2.5 cups 1%)
- 1 large celery stalk, chopped
- 1/2 medium chopped onion
- 2 chicken bouillons
- fresh ground pepper
- pinch of thyme
- 10 oz frozen classic mixed vegetables (peas, carrots, green beans, corn)
- 2 potatoes, peeled and cubed small
- 16 oz cooked chicken breast, diced small
