Potato Gnocchi with Mushroom Sauce

Gnocchi: 1. Preheat oven to 400°
- Gnocchi:
- 3 large Russet potatoes
- 2 large egg yolks, beaten
- 1 2 cups all purpose flour (may not use all)
- 1/2 teaspoon fine sea salt
- Few gratings nutmeg (optional)
- Mushroom Sauce:
- 1 1/4 pound cremini mushrooms, wiped and trimmed
- .07 ounce package dried porcini mushrooms (or equivalent weight loose)
- 2 cups homemade chicken stock
- 1/4 cup dry white Italian wine
- 2 plump cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/3 cup coarsely chopped Italian parsley
- 3 Tablespoons extra virgin olive oil
- 2 3 Tablespoons butter
- 1 Tablespoon white truffle oil
- Fresh grated parmesan to garnish
- Salt
- Fresh black pepper
Pork with Tangy Ginger Sauce

Season the pork with salt and pepper
- 4 lb. pork butt, cut into 1-inch cubes
- Salt and freshly ground pepper, to taste
- 2 Tbs. canola oil
- 2 red bell peppers, seeded and cut into 1⁄2-inch

- 2 1/2 cups low-sodium vegetable or chicken broth

- 3 to 4 medium russet potatoes, peeled
- 1 cup heavy cream
- 1/2 cup milk
- 1 1/2 tablespoons flour
- 1 large clove garlic, pressed
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon butter, softened
- 1 1/2 cups grated Cheddar cheese(1-10oz bar makes a little over 3 cups)

Preheat an electric panini maker according to the manufacturer's instructions to 570°F
- 4 eggplant slices, each 1/2 inch thick

Grilled Tuscan Pork Chops

Put the chops in a gallon-size zip-top bag, and dump in the salad dressing
- 6 Pork rib chops, 3/4" thick
- 16 oz Zesty Italian salad dressing
- 1/4 cup Good balsamic vinegar
- 1/8 cup Honey
- 1 sprig Fresh rosemary
- 1/2 tsp Black pepper, ground fresh
