1. Combine the flour, salt and pepper in a plastic bag

  • 2 cups all-purpose flour for coating
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 (4 pound) chicken, cut into pieces
  • 2 tablespoons olive oil
  • 1 onion, pierced (discard before serving stew)
  • 3-4 cloves garlic, minced
  • 1 green bell pepper or red pepper, sliced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 small can tomato paste
  • 1/2 teaspoon dried oregano (also used a little parsley and basil)
  • 1 cup red wine
  • 2 cups fresh mushrooms, quartered (don’t need to use)
  • salt and pepper to taste
  • can add carrots or potato

  • Turkey:
  • 8 tablespoons butter, softened
  • 1 tablespoon House Seasoning, recipe follows
  • 2 tablespoons chopped fresh parsley leaves (maybe add rosemary & thyme)
  • 2 tablespoons minced shallots
  • 2 tablespoons minced garlic cloves
  • 1 (15-pound) turkey
  • Stuffing, if desired
  • Glaze: (don't double batch, & add a little cornstarch)
  • 3 tablespoons butter
  • 1 (12-ounce bag) cranberries
  • 1/2 cup maple syrup
  • 3/4 cup cranberry juice
  • 2 teaspoons apple cider vinegar
  • 3/4 cup apple cider
  • 1/4 cup brown sugar
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder
  • House Seasoning: (not so much salt, just combine a little of all three)
  • 1 cup salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder
  • Mix all ingredients together and store in an airtight container for up to 6 months.

Crock Pot: Sear then put on rack, out liquid on bottom and cook low 8-10 hours

  • Dry Rub:
  • 2 whole slabs pork baby back ribs
  • 8 tablespoons light brown sugar, tightly packed

  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon jalapeno seasoning (subbed with ancho chile pepper)
  • 1/2 teaspoon Old Bay Seasoning (subbed with chipotle chile pepper)
  • 1/2 teaspoon rubbed thyme
  • 1/2 teaspoon onion powder
  • Braising Liquid:
  • 1 cup white wine
  • 2 tablespoons white wine vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon honey
  • 2 cloves garlic, chopped

Put oil in pan and fry on both sides, then put on pan and bake in oven till about 15-20mins on 350 degrees

  • Stuffing:
  • Diced Procuitto (1 slice)
  • Shredded Mozzarella
  • Grated cheese (Romano)
  • Pepper
  • Fresh Parsley
  • Breadcrumb
  • Garlic (2 cloves)
  • 1 egg
  • 4 Veal chops, butterfly chops evenly, pound, open and put in stuffing, fold over & close
  • The breading:
  • Roll in flour
  • Then egg wash (egg & water)
  • The Italian bread crumb
  • Sauce:
  • Butter
  • Onions dices (a little)
  • A little small roasted red peppers (if have)
  • Little white wine
  • Sautee a little then add a little demi glaze
  • Let reduce down
  • I used marsala recipe also instead of above sauce.

  • Balsamic-Honey Dressing:
  • 1 bag baby spinach – (I always rewash), go through and discard any tough stems
  • 1 small can Mandarin oranges, drained
  • 1/2 small red onion, halved lengthwise and shaved thin (optional)*
  • 1/2 cup walnut halves, toasted
  • 1/4 pound single piece pancetta, cut into 1/4" dice
  • Shaved Parmesan to garnish
  • Olive oil
  • 2 Tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 2 teaspoons honey
  • Pinch salt and pepper
  • Grated zest of one orange
  • Juice of 1/2 an orange
  • 1/2 cup light olive oil
  • If very strong, soak in ice water 15 minutes, drain, pat dry.
