In a large pot, melt the butter over medium-low heat

  • 2 tsp butter
  • 2 stalks of celery, chopped
  • 1 small onion, chopped
  • 1 carrot, peeled & chopped
  • 2 cloves of garlic, minced
  • 8 cups fat free chicken broth (vegetable broth for vegetarians)
  • 2 cups water
  • 5 oz shitaki mushrooms, sliced
  • 8 oz baby bella mushrooms, sliced
  • 1 small Parmigiano Reggiano rind (optional)
  • 9 oz three cheese tortellini (Buitoni)
  • salt to taste
  • 1/2 tsp fresh ground pepper
  • Parmigiano Reggiano, grated (optional for topping)

  • 6 medium artichoke hearts, cooked
  • 3 oz. asiago cheese, thinly sliced
  • 2 Tbs. chopped fresh flat-leaf parsley
  • 1 1/2 lb. veal cutlets, pounded 1/4 inch thick
  • Salt and freshly ground pepper, to taste
  • 1/2 cup all-purpose flour
  • 4 Tbs. (1/2 stick) cold unsalted butter, cut into 1-inch pieces
  • 3 Tbs. olive oil
  • 1/2 cup white wine
  • 2 Tbs. fresh lemon juice
  • Tsp demi glace (optional not on orginal recipe, I added to recipe)
