Artichoke and Spinach Rolled Stuffed Bread

fills two pizza doughs
- 1 package frozen artichoke hearts, defrosted with extra water squeezed out
- 2 packages frozen spinach, defrosted with extra water squeezed out
- 2 cups provolone cheese, shredded
- 1 cup Asiago cheese, grated
- Zest of 1 lemon
- 8 springs of thyme, leaves removed
- 2 cloves garlic, grated
- Salt and freshly ground black pepper
- 1 package pizza dough, such as Pillsbury
- 1 tablespoon extra-virgin olive oil (EVOO)
- 1 tablespoon sesame seeds
Greek Yogurt Cheesecake Cups

Makes 8 cups
- 2 cups semisweet chocolate chips
- 2/3 cup reduced-fat cream cheese, softened
- 1/4 cup powdered sugar
- 1/3 cup plain Greek yogurt
- 1/2 tsp fresh orange zest
Filet Mignon Roast with mushroom sauce

Before cooking the filet mignon roast, bring to room temperature
- In a large skillet, on medium-high heat, melt:
- Mushroom Sauce
- 2 tablespoons butter
- Once butter is melted, add to the pan:
- 10 oz of coarsely chopped mushrooms
- 2 garlic cloves, minced
- 1 teaspoon onion powder
- Cook until most of moisture from mushrooms is gone. Add to the pan:
- 1/2 cup red wine
- Cook until most of liquid is gone. Reduce heat and add:
- 1/2 cup beef broth
- 3-4 tablespoons pan drippings
- Whisk until combined and serve over meat.
- For a lighter flavor use white wine instead of the red and chicken broth instead of beef.
Honey-Lime Sweet Potatoes

Bring a saucepan three-fourths full of water to a boil over high heat
- 6 sweet potatoes, peeled and cut crosswise into slices 1/2 inch thick
- Melted unsalted butter for brushing, plus 2 Tbs. butter
- 1/2 cup honey, at room temperature
- 1/4 cup fresh lime juice
- Salt and freshly ground pepper, to taste
Chicken and Dumplings

Step One EXCLUDING THE BISCUITS put all ingredients in, then cover and cook on LOW for 8 hours
- 4 Chicken Breasts (boneless, skinless)
- 2 Tablespoons of Butter
- 1 Can of Cream of Chicken Soup
- 1 Can of Cream of Celery Soup
- 3 1/2 Cups of Chicken Broth
- 1 Onion, finely diced
- 1 Cup of Celery, diced
- 1 Cup of Carrots, diced
- 2 Chicken bouillon cube
- 10 Ounces of Can of Biscuits, but you can make your own
Pasta with sausage

Remove sausage from skin. Crumble and brown in oil
- 3-4 sausage links ( out of casings)
- 2-3 crushed garlic cloves
- 4 tbsp olive oil
- 1/2 cup of white wine
- Parsley
- Salt and pepper
- Red pepper
Churros

Directions Prepare to fry the churros by heating oil in a pan (1 to 1½ inches deep) to 360°F
- vegetable oil or olive oil
- 1 1 1 cup water
- 1 1⁄2 1⁄2 cup margarine or 1⁄2 cup butter
- 1 1⁄4 1⁄4 teaspoon salt
- 1 1 1 cup all-purpose flour
- 3 3 3 eggs
- 1 1⁄4 1⁄4 cup sugar
- 1 1⁄4 1⁄4 teaspoon ground cinnamon (optional)
- Chocolate for Churro Dunking
- 4 4 4 ounces dark chocolate, chopped
- 2 2 2 cups milk
- 1 1 1 tablespoon cornstarch

Easy Zucchini Fritters

- 1 1/2 pounds zucchini, grated
- 1 teaspoon salt
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg, beaten
- 2 cloves garlic, minced

- 2 medium ripe bananas, (the riper the better) sliced into 1/2" pieces
- 1 1/2 cup blueberries (or any fruit)
- 1/4 cup honey (or agave)
- 1 cup uncooked quick oats
- 1/4 cup chopped walnuts or pecans
- 1/2 tsp baking powder
