- 2 ripe avocados
- 1 ripe peach, diced

1. Heat 2 tbsp of the oil in a large skillet or wok
- 3 tablespoons vegetable oil
- 1 1/2 pounds boneless, skinless chicken breasts, cut into thin strips

- 1 head bok choy (about 2 lbs), trimmed and roughly chopped
- 1 sweet red pepper, cored and sliced

- 2 tablespoons low-sodium soy sauce
- 1 tablespoon cornstarch
- 2 teaspoons sugar
- 1/4 teaspoon hot sauce
