Southwestern Omelet

Combine first 4 ingredients in a medium bowl, stirring with a whisk
- 2 tablespoons chopped fresh cilantro
- 1/4 teaspoon salt
- 4 large egg whites
- 1 large egg
- 1/2 cup canned black beans, rinsed and drained
- 1/4 cup chopped green onions
- 1/4 cup (1 ounce) reduced-fat shredded cheddar cheese
- 1/4 cup bottled salsa

Baked Cauliflower, Broccoli or Brussels-spout Custard

You can also make this as one large gratin by baking it in a shallow two-quart dish for 40 minutes
- Cauliflower:
- 1 head cauliflower (about 1 1/2 pounds), cut into small florets (about 8 cups)
- 2 tablespoons extra-virgin olive oil
- Coarse salt and freshly ground pepper
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 3 cups whole milk
- 2 tablespoons coarsely grated Parmigiano-Reggiano
- Pinch of freshly grated nutmeg
- 1 1/2 cups finely grated Gruyere (about 4 ounces)
- Broccoli:
- Substitute 1 1/2 lbs broccoli, cut into florets (about 8 cups) for the cauliflower.
- Brussels-sprout:
- Substitute 1 1/2 lbs brussels sprouts, trimmed and halved (about 6 cups) for the cauliflower. Roast about 12 minutes.

- 1/2 lb whole-wheat or farro short pasta (rigatoni, penne, sedani; 8 oz)
- 1 tbsp olive oil
- 6 oz cremini mushrooms, thinly sliced (about 2 cups)
- 1/4 cup finely diced sweet onion
- 1 medium carrot, peeled, halved length-wise and thinly sliced (about 1/2 cup)
- 1/2 tsp sea salt
- 2 cups low-fat, low-sodium chicken broth
- 1/3 cup low-fat sour cream
- 3 tbsp finely chopped fresh parsley
- 1 oz Parmigiano-Reggiano cheese, finely grated (about 1/3 cup), divided
- 2 tsp finely chopped fresh tarragon
- 1/2 tsp finely grated lemon zest
- 1 tbsp fresh lemon juice
- 5 oz roasted chicken breast, torn into bite-size pieces (about 1 cup)
- 3/4 cup frozen peas, thawed
- 1/4 cup roughly chopped raw almonds, optional

Breakfast Pizza

- 1 lb hot pork sausage
- 1 pkg 8 crescent rolls
- 1 1/2 c hash browns
- 1 c cheddar cheese
- 2 T parmesan cheese
- 1 C swiss cheese
- 1 C mozzarella cheese
- 5 eggs
- 1/4 c milk
- 1/2 t salt
- 1/4 t pepper
White Christmas
