Chocolate Banana Brownie Overload

Clean dessert pizza! Note: this requires s 12-in perforated pizza pan
- Olive oil cooking spray
- 1 t cornmeal (not coarse grind)
- 1 1-lb pkg store-bought whole-wheat pizza dough
- 4 medium firm ripe bananas, sliced 1/4-inch thick
- 2 c fresh raspberries
- 2 T unsalted walnut pieces, toasted
- BROWNIE TOPPING
- 2 medium ripe bananas, mashed
- 1/4 c unsalted almond butter
- 1/4 c unsweetened cocoa powder
- 2 T maple sugar flakes, finely ground
- 2 T whole-wheat flour
- 1 t baking powder
- 1 t pure vanilla extract
- 1 t cinnamon, ground
- 1/8 t cayenne pepper
- Pinch sea salt
- 1/2 c melted dark chocolate (70% cocoa or greater)
- 4 egg whites, divided
- CREAM CHEESE ICING
- 1/2 c low-fat plain cream cheese
- 1 t pure vanilla extract
- 1 T maple sugar flakes, finely ground
Blueberry Cheesecake-Stuffed French Toast Casserole

Preheat over to 350 F. Coat a 9x13 inch baking pan with cooking spray
- Blueberry Sauce:
- 13 to 14 slices whole-wheat bread, crusts removed
- 1 cup low-fat ricotta cheese
- 1/2 cup low fat plain cream cheese
- 4 large eggs, divided
- 5 tbsp evaporated cane juice, divided
- 1 3/4 cups fresh blueberries
- 1 cup low-fat milk
- 2 egg whites
- 2 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/4 cup unsalted almonds, sliced
- 2 1/4 c fresh blueberries
- 1/4 c organic evaporated cane juice
Rubbed Radish Salad

Perfect Pecan Tassies

1. Using a piece of waxed paper, grease a 24-cup mini-muffin tin generously with softened butter
- FOR THE CRUST
- 1/2 cup (1 stick) unsalted butter, at room temperature, plus more for greasing the muffin tin
- 3-ounce package cream cheese, at room temperature
- 1 cup flour
- 1 teaspoon fine cornmeal
- 1/4 teaspoon fine sea salt
- FOR THE PECAN FILLING
- 1/2 cup pecans
- 1 large egg
- 3/4 cup firmly packed light brown sugar
- 1 tablespoon unsalted butter, melted
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon fine sea salt
- 1/8 teaspoon freshly grated nutmeg

Broiled Tilapia Parmesan

Preheat your oven's broiler
- 1/2 cup Parmesan cheese
- 1/4 cup butter, softened
- 3 tablespoons mayonnaise
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon dried basil
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon onion powder
- 1/8 teaspoon celery salt
- 2 pounds tilapia fillets
Green Chili Cheddar Cheese Soup

Peel potatoes and chop into medium duce
- 4 large baking potatoes
- 1 small onion, chopped
- 4 cans (about 7 cups) chicken broth
- 1 T salt
- 1 c milk, cream or half and half
- 1 can (4 oz) chopped green chiles
- 1 c shredded Cheddar cheese, plus more for garnish
- Pepper
- Bacon, cooked and crumbled, optional
- Sour cream, optional
- Chopped green onion, optional
Caramel Apple Cider

First, bring the cream and brown sugar to a boil in a medium saucepan over medium heat
- CIDER
- 1/4 cup heavy cream
- 1/4 cup brown sugar
- 3 cups apple cider
- 1/2 cup water
- CARAMEL WHIPPED CREAM
- 1/2 cup heavy cream
- 1 tablespoon brown sugar
Fish Fillets with Salsa Verde

Thaw fish if frozen. Rinse fish, pat dry with paper towels
- 1 lb fresh or frozen cod or orange roughly fillets
- 1 T lime juice
- 1 T olive oil
- 1/8 t salt
- 1/8 t ground black pepper
- 1/2 c bottled salsa verde
- 3 T snipped fresh cilantro
Healthy Candy Bars

Grind cashews to a very fine meal in a food processor
- 1 1/2 c raw cashews
- 1 1/2 c dates, pitted and roughly chopped
- 1/2 c almond butter
- 1/2 c grade B maple syrup
- 1/2 c coconut flour
- 1/2 c unsweetened shredded coconut
- 1/2 t almond extract
- 1 1/2 c dark chocolate chips (60% or higher cocoa content)
- 1 1/2 T coconut oil
