Hard-Boiled Egg Chocolate Chip Cookies

Use up those leftover Easter eggs!
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup cold butter
- 3/4 cup granulated sugar
- 1/2 cup firmly packed light brown sugar
- 2 hard-boiled eggs, shells removed
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
Banana Nut Smoothie

1. Pour 2 cups almond milk into ice cube trays
- 4 c almond milk
- 2 bananas
- 1/3 c almond butter
- 1/4 c maple syrup
- 1 t vanilla extract
- 1/2 t ground cinnamon
Wonton Chips and Artichoke Dip

1. Preheat oven to 350. Slice wontons in half and lightly brush each side with olive oil
- Chips:
- 1 package wonton wrappers
- 2 T olive oil
- kosher salt
- Dip:
- 1/2 c freshly grated Parmesan
- 1/2 c low-sodium vegetable stock
- 1/2 pound light cream cheese
- 3 cloves garlic, roasted and smashed
- 3 T unsalted butter
- 1 T fresh lemon juice
- 1/2 t chili pepper flakes
- 1/2 t kosher salt
- fresh ground black pepper
- 2 c canned artichoke hearts, drained
Red Beans and Rice

1. In a large pot, warm the oil over medium-high heat
- 1 tablespoon olive oil
- 1 large onion, diced
- 1 small green bell pepper, diced
- 2 teaspoons minced garlic
- 1 (16-ounce) can reduced-sodium chicken broth
- bay leaf
- 1 teaspoon dried thyme leaves
- 4 to 6 drops hot sauce (we used Tabasco brand)
- 3 (15 1/2-ounce) cans small red beans (we used Goya brand), rinsed and drained (you can also substitute kidney beans)
- 1 pound reduced-fat smoked sausage, sliced into bite-size pieces
- 6 cups hot cooked rice, white or brown
Grasshopper Pie

1. Crush the cookies into fine crumbs
- 17 chocolate sandwich cookies (we used Oreos)
- 3 tablespoons butter, melted
- 24 large marshmallows
- 1 cup milk
- 1/2 teaspoon mint extract
- 1/4 teaspoon coconut extract
- Green food coloring
- 1 cup whipped cream or whipped topping

- 2 large eggs, room temperature
- 1 teaspoon pure vanilla extract
- 1/3 cup whole milk
- 4 ounces bittersweet chocolate, preferably 61% cacao, melted

- 1/2 cup crunchy peanut butter
- 1 1/4 cups vanilla ice cream, softened

- 1 14.5 oz can dived tomatoes, drained
