In a pot, combine the sugar, espresso powder and cocoa powder
- 1/4 c light brown sugar
- 2 T espresso powder
- 1 T cocoa powder
- 2 c milk
- 1/2 c heavy cream
- 1/4 c vodka
- Whipped cream and more espresso powder for serving
Green (Zucchini) Muffins

1. Preheat oven to 375 degrees and place paper liners in muffin tins
- Paper cupcake liners
- 3 cups flour
- 1 Tbs baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 2 eggs
- 1/2 cup low-fat milk
- 1/2 cup canola or vegetable oil
- 1 cup sugar, plus extra for sprinkling
- 2 cups shredded zucchini (about 2 medium zucchini)
Snow Peas with Sweet and Sour Dressing

Prepare dressing: In a small bowl, combine maple syrup, vinegar and oil
- 1 T pure maple syrup
- 1 T rice wine vinegar
- 2 t sesame oil
- 3 c snow peas, trimmed (don't use frozen snow peas, only fresh)
- 1 t toasted sesame seeds
Asian Beef with Snow Peas

In a small bowl, combine the soy sauce, rice wine, brown sugar and cornstarch
- 3 tablespoons soy sauce
- 2 tablespoons rice wine
- 1 tablespoon brown sugar
- 1/2 teaspoon cornstarch
- 1 tablespoon vegetable oil
- 1 tablespoon minced fresh ginger root
- 1 tablespoon minced garlic
- 1 pound beef round steak, cut into thin strips
- 8 ounces snow peas
Milk Tart with Brown-Sugar Crust

Crust: In a food processor, pulse brown sugar and 1/4 cup flour to combine

- 2 tablespoons packed dark-brown sugar
- 1 1/4 cups all-purpose flour, plus more for dusting
- 1/2 teaspoon coarse salt
- 1 stick cold unsalted butter, cut into small pieces
- 1 large egg yolk, lightly beaten
- 2 tablespoons ice water
- Filling
- 1 1/2 cups whole milk
- 1/2 cup heavy cream
- 1/2 vanilla bean, split and seeds scraped
- 1 large egg
- 1/2 cup granulated sugar
- 1 tablespoon all-purpose flour
- 1 tablespoon cornstarch
- 1/2 teaspoon coarse salt
- 2 tablespoons cold unsalted butter, cut into small pieces
- Ground cinnamon, for sprinkling
Thai Chicken Sandwich

Toss together cucumber, carrot, scallion, mint, lime juice, sesame oil, and a pinch of salt
- 1 c chopped cucumber
- 1 small carrot, grated
- 1 scallion, thinly sliced
- 2 T chopped fresh mint
- Juice of 1/2 lime
- 1 t sesame oil
- Pinch of salt
- 1/2 c Sweet and sour Peanut Sauce
- 4 whole wheat pitas
- 2 c shredded cooked chicken
Chocolate Caramel Brownie Stacks

Heat oven to 325. Line a 9x9x2-in baking pan with foil
- 1 1/2 c all-purpose flour
- 1/2 c unsweetened cocoa powder
- 3/4 t baking soda
- 1/2 t salt
- 3/4 c (1 1/2 sticks) unsalted butter
- 3 oz semisweet chocolate, broken up
- 1 1/4 c sugar
- 3 large eggs
- 2 t vanilla extract
- 4 oz (1/2 pkg) cream cheese, softened
- 1/3 c caramel sauce, plus more for drizzling
- 1/2 t unflavored gelatin
- 1 1/2 c heavy cream
- Chocolate sauce

French Almond Macaroons

- 1 tablespoon extra-virgin olive oil
- 3 shallots, finely chopped
- 2 cups pearled farro
- 4 cups reduced-sodium chicken broth
- 1/2 cup extra-virgin olive oil
- 1 teaspoon finely shredded lemon peel
- 1/4 cup lemon juice
- 1 tablespoon snipped fresh oregano
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly cracked black pepper
- 4 cups baby spinach leaves
- 2 cups blueberries
- 1 fennel bulb, trimmed, halved, cored, and very thinly sliced
- 1 bunch green onions, thinly sliced (1/2 cup)
- 1 cup roasted, salted pistachios, coarsely chopped
