Mango and Coconut Smoothie

- 1 cup Coconut milk
- Fresh mint
- Honey
- Ice
Beef Skirt Steak Skewers

Thinly slice chiles and onion
- 1 serrano chile
- 1 poblano chile
- 1 med red onion
- 2 cloves garlic, minced
- 1 T fresh rosemary
- 1/4 c canola oil
- 1 lb beef outside skirt steak, cut into 1-in cubes
- Wooden skewers soaked in lemon juice for at least an hour
- S&P t taste
Brown Ale-Braised Chicken

1. Preheat oven to 350 degrees F
- 1 tablespoon packed brown sugar
- 1/2 tablespoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon crushed red pepper
- 8 skin-on chicken thighs
- 1 tablespoon vegetable oil
- 1 medium onion, sliced
- 2 stalks celery, chopped
- 8 small whole carrots with tops, peeled and tops trimmed to 1-inch
- 2 tablespoons all-purpose flour
- 1 12 ounce bottle brown ale
- 1/2 cup reduced-sodium chicken broth
- 4 cloves garlic, peeled
- Coarsely chopped celery leaves
- Fresh thyme
Thai Cooking Lemongrass Soup

Peel and devein the prawns
- 10 uncooked prawns, unpeeled
- 1/2 c shitake, oyster and other wild mushrooms
- 4 c water
- Large pinch of salt
- 4 T fish sauce, divided
- 6 slices ginger
- 2-3 Thai chilies, minced (about 102 T minced)
- 2 stalks lemongrass, chopped and bruised (pound to release oil)
- 4 kaffir lime leaves, torn
- 4 T lime juice
- 3 T fish sauce
- 1/2 t sugar
- Handful of cilantro
Roasted Pink Grapefruit with Honey Yogurt

Just because you're trying to lose weight doesn't mean you can't indulge in dessert
- 1 cup low-fat Greek yogurt
- 2 teaspoons honey
- 1 pink grapefruit, peeled, sectioned, and white membranes removed
- 2 teaspoons sugar
Sirloin and Cremini Teriyaki

1. Place noodles in a bowl
- 7 ounces stir-fry rice noodles (such as Thai Kitchen, from a 14 oz pkg)
- 2 tablespoons vegetable oil
- 2 pounds boneless beef sirloin, cut against the grain into 1/4-inch slices
- 1/4 teaspoon salt
- 2 red onions, sliced
- 2 sweet peppers, cored, seeded and sliced
- 8 ounces cremini mushrooms, sliced
- 2 cloves garlic, sliced
- 1 tablespoon cornstarch
- 1 cup reduced-sodium beef broth
- 1/4 cup sesame teriyaki sauce (such as Soy Vay)
- 2 tablespoons rice vinegar
Bacon, Scallop and Pineapple Bites

Preheat oven to 400. In a small bowl, soak 24 wooden toothpicks in warm water
- 1/2 ripe pineapple (about 12 oz), peeled, cored and cut into 24 1-in pieces
- 1 lime, zested and juiced
- 1/2 t kosher salt
- 1/2 t freshly ground pepper
- 5 scallions, white and light green parts only, cut into 24 pieces (about 1-in long)
- 4 slices low-sodium bacon (4 oz), cut into 24 pieces about 1 in long
- 12 scallops (1 lb), halved
- 1/3 c low sodium teriyaki sauce
