Greek Pasta with Shrimp

Preheat oven to 450 degrees
- 1/4 cup chopped onion
- 1/2 cup extra virgin olive oil
- 1 can diced tomatoes (14–15 ounces)
- 2 cloves garlic, crushed
- 1/2 teaspoon basil
- Salt and pepper to taste
- 1 pound raw shrimp, peeled
- 1 lemon
- 8 ounces crumbled feta cheese
- 12 kalamata olives, halved and pitted
- Cooked pasta (angel hair, linguine, your choice)
Dark Chocolate Spelt Brownies

Step 1 Preheat oven to 350 degrees
- 1 stick unsalted butter, cut into tablespoons, plus more for pan
- 6 ounces bittersweet chocolate, preferably 70 percent cacao, chopped (about 1 1/4 cups)
- 3/4 cup granulated sugar
- 3/4 cup packed light-brown sugar
- 3 large eggs, room temperature
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon coarse salt
- 3/4 cup spelt flour

In a shaker muddle cucumber slices, then add vodka, St
- 2 cucumber slices
- 1 oz vodka
- 1/2 oz St. Germain
- 1 oz sour mix
- Lemon and cucumber slices to garnish
Hazelnut Shortbread Bars

1. Preheat oven to 350°. Roast hazelnuts on a rimmed baking sheet until light golden, about 18 minutes
- 3 cups raw, skin-on hazelnuts*, divided
- 3/4 teaspoon cinnamon, divided
- 2 cups flour
- 1 cup plus 3 tbsp. cold butter, cubed
- 3/4 cup granulated sugar, divided
- 1/2 teaspoon salt, divided
- 7 tablespoons maple syrup
- 3 tablespoons packed light brown sugar
Pecan Bars

1. Heat oven to 350. Butter 8-in square baking pan
- Crust:
- 1/2 c cold unsalted butter, cut into pieces
- 1 1/2 c all-purpose flour
- 1/3 c granulated sugar
- 1/4 t kosher salt
- Filling:
- 2 c pecans
- 1/2 c packed light brown sugar
- 1/4 c granulated sugar
- 4 T unsalted butter, cut into pieces
- 1/4 c honey
- 2 T heavy cream
- 1 t pure vanilla extract
Mushroom Melts

Fill a med pot 1/3 full of water and place over high heat
- 1/2 lb broccoli florets
- 1 lb portobello mushrooms, cut into 1/2-in thick slices
- 1/2 Spanish onion, sliced into rounds
- 2 t EVOO
- 8 1-oz slices whole wheat bread
- Pinch dried thyme
- Pinch dried basil
- 4 oz sliced part-skim mozzarella cheese
Cranberry Banana Oatmeal Cookies

Preheat oven to 375. Combine dry ingredients in a bowl
- 1 1/2 c oat flour
- 3/4 c steel-cut oats
- 1/2 t baking powder
- 1/2 t baking soda
- 1/2 t salt
- 1/2 c raw sugar
- 1/3 c dried cranberries
- 1 t canola oil
- 1/3 c soy milk
- 1 medium-sized banana, pureed
- 1 t vanilla extract
Corn Bread Stuffing with Sausage

1. Preheat oven to 325 degrees F
- 8 corn bread muffins, broken into large pieces (about 4 cups)
- 8 ounces bulk pork sausage
- 1 medium onion, cut into wedges
- 4 cups fresh spinach
- 1 teaspoon fennel seeds, crushed
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 - 1 1/3 cups turkey or chicken broth
Baked barley risotto with butternut squash

1. Heat oven to 400. Heat oil in a Dutch oven over med-high heat
- 2 T olive oil
- 1 small butternut squash, peeled, seeded and cut into 1-in pieces (about 3 c)
- 1 onion, chopped
- 1 c pearl barley
- 1/2 c dry white wine
- 3 c low-sodium vegetable broth
- 5 oz baby spinach
- 1/2 c Parmesan, plus more for serving
- 1 T unsalted butter
- salt and pepper
Pizza Popcorn

- 2 Tbsp. olive oil
- 10 cups popped popcorn (from 1/2 cup unpopped kernels)
- 1/2 cup grated Parmesan
- 1 tsp. dried oregano
- 1 Tbsp. finely chopped sun-dried tomatoes
- 1/4 tsp. red pepper flakes
- 1/4 tsp. garlic powder
