Thinly slice 2 stalks celery and place in a large bowl
- 6 stalk(s) celery
- 2 beets, peeled and grated
- 3 tablespoon(s) chopped fresh flat-leaf parsley
- 1 tablespoon(s) olive oil
- 1 tablespoon(s) fresh lemon juice
- Kosher salt
- Pepper
- 1/2 cup(s) roughly chopped walnuts
- 8 ounce(s) sliced deli ham
- 8 ounce(s) cheese, such as Cheddar, Havarti or a combination, sliced
- 8 ounce(s) cherry tomatoes
- 4 slice(s) multigrain bread
- Whole-grain mustard, for serving
Ginger-Honey Carrots

In a small bowl, whisk 1 1/4 c water with honey, vinegar and salt until well combined
- 1 1/2 T honey
- 2 t rice vinegar
- 1/2 t kosher salt, plus more to taste
- 1 T unsalted butter
- 1 1/2 lbs carrots, sliced diagonally into 1-in chunks
- 1 clove garlic, thinly sliced
- 1 2-in piece fresh ginger, peeled and grated
- Fresh ground black pepper
Rose Rasperry Sorbet

Bring sugar and water to a boil in a small saucepan, stirring until sugar has dissolved
- 1 cup sugar
- 1 cup water
- 2 1/2 ounces unsprayed rose petals (about 2 1/2 packed cups)
- 2 1/2 pints fresh raspberries (about 4 1/2 cups)
Unwrapped Shrimp Egg Rolls

1. Heat oven to 400 degrees
- 16 wonton wrappers
- 1 tablespoon vegetable oil
- 1 14 ounce bag coleslaw mix
- 1 sweet red pepper,cored, seeded and thinly sliced
- 4 scallions, trimmed and chopped
- 1/2 cup reduced-sodium vegetable broth
- 2 tablespoons reduced-sodium soy sauce, plus more for serving (optional)
- 2 tablespoons rice vinegar
- 1 teaspoon garlic powder
- 1 teaspoon sugar
- 1/2 teaspoon ground ginger
- 1/2 pound cooked shrimp, shells removed, coarsely chopped
- 2 cups cooked brown rice Duck sauce for serving(optional)
Morning Peach Melba

Halve peach and top with remaining ingredients
- 1 peach
- 8 oz plain lowfat Greek yogurt
- 1 1/2 t honey
- 1/4 t vanilla extract
- 2 T raspberry jam
- 2 T toasted sliced almonds
Chewy Double Chocolate Peppermint Cookies

Preheat oven to 350. In a large bowl, cream butter and sugar together for about 1-2 mins
- 1/2 c (1 stick) unsalted butter, softened
- 3/4 c sugar
- 1 egg
- 1/4 t natural peppermint extract
- 1 1/4 c unbleached all purpose flour (or whole wheat pastry)
- 1/3 c cocoa powder
- 1/4 t salt
- 1/2 t baking soda
- 1/4 t baking powder
- 1 candy cane, finely crushed
- 1/3 c dark, bittersweet or semisweet chocolate chips
Hearty Lentil Soup

1. Rinse lentils and drain 2
- 1 c dried red or green lentils
- 2 T olive oil
- 1 yellow onion, chopped
- 1 red pepper, chopped
- 1/4 t cumin, ground
- 1/4 t red pepper flakes, ground
- 1/4 c whole grain or brown rice
- 1/2 t sea salt
- 1 T fresh lemon juice
Southwestern Strata

1. In a large bowl, whisk together eggs, milk and salt and set aside
- 6 large eggs
- 2 c milk
- 1 t salt
- 1/2 lb cooked chorizo sausage, sliced, or 1 pkg (8 oz) thawed cooked breakfast sausage patties, crumbled
- 1 container fresh salsa (14 oz)
- 1 can (11 oz) corn, drained
- 1 4.5 oz can chopped green chilies
- 1 c crushed corn tortilla chips
- 13 slices firm white bread such as Pepperidge Farm, crust removed
- 1 1/2 c shredded Mexican cheese blend, divided
Pear-Cheese Quesadillas

Place tortillas on a clean work surface and spread 1/2 T honey on each
- 4 whole grain tortillas (each 10-in in diameter)
- 2 T raw honey
- 5 oz low-fat mozzarella cheese, grated (1 1/4 c)
- 1/4 c dried currants
- 1 small ripe pear, cored and very thinly sliced
Strawberry Balsamic Frozen Yogurt

1. In a food processor, pulse strawberries until almost smooth
- 12 ounces strawberries, hulled and quartered
- 1 1/2 cups (12 oz.) whole-milk vanilla yogurt
- 2 1/2 tablespoons honey
- 1 tablespoon cherry balsamic or regular balsamic vinegar
- 1/4 teaspoon freshly ground black pepper, optional
- Pinch of salt
