- 1/2 cup sun-dried tomatoes

Barley and Apple Stuffed Acorn Squash

In a medium pot, add barley and 1 cup water
- 1/4 cup uncooked hulled barley
- 1/4 cup crushed unsalted walnuts
- 1 tbsp chopped fresh basil or 1 tsp dried basil
- 1 apple (McIntosh, Cortland or Empire), peeled, cored and diced
- 1 tbsp pure maple syrup
- 1/2 tsp ground cinnamon
- 1 acorn squash
- 2 tsp extra-virgin olive oil
Prosciutto-and-Spinach Wrapped Shrimp

Drizzling Sauce: 1. Combine all 3 ingredients and keep warm while grilling
- Shrimp
- 1 1/2 pounds peeled, deveined extra-large or jumbo shrimp, thawed if frozen, rinsed, and patted dry

Slow Cooker Open-Face Pulled-Pork Sandwiches with Tangy Broccoli Slaw

In a medium bowl, mix together the red onion, 4 tablespoons of the vinegar, and ¼ teaspoon each salt and pepper
- 1 medium red onion, sliced
- 8 tablespoons cider vinegar
- kosher salt and black pepper
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1 12-ounce package broccoli slaw (4 cups)
- 1 medium yellow onion, chopped
- 1/4 cup tomato paste
- 1/4 cup packed light brown sugar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon Cajun seasoning
- 1 1/2 pounds pork shoulder, trimmed and cut into 2 pieces

Crunchy Jerk Chicken Tacos with Watermelon-Mango Salsa

Stir together watermelon, mango, onion, cilantro, jalapeño pepper, and lime juice in a medium bowl
- 1 cup finely chopped watermelon
- 1 cup finely chopped mango
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 jalapeño pepper, minced
- 2 tablespoons fresh lime juice
- Kosher salt to taste

- 2 cups shredded cooked chicken thighs (including skin)
- 1 1/2 teaspoons jerk seasoning

Heat oven to 375° F. Lightly oil a 9-by-13-inch or some other shallow 3-quart baking dish
- 1 T olive oil, plus more for the baking dish
- 4 links sweet Italian sausage, casings removed (about 1 lb)
- 3 stalks celery, thinly sliced
- 2 med onions, chopped
- 2 tart apples (granny smith or pink lady) cored and chopped
- 1/4 c chopped fresh sage
- Kosher salt and pepper
- 1 large baguette (about 3/4 lb) cut into 3/4-in pieces (about 7 c)
- 3 c low-sodium chicken broth
- 2 large eggs, beaten
