Blender Friendly Juice

In a blender combine ingredients with 1/2 c water
- 1/2 c packed baby spinach
- 1/2 c packed torn kale leaves
- 1/2 c frozen green grapes
- 1/2 peeled and chopped frozen banana
- 1/2 cored and chopped unpeeled Fuji apple
- 1/2 peeled and seeded orange
- 1/2 t chia seeds
Christmas Cosmo

Place all ingredients in a shaker with ice
- 0.5 oz Cointreau
- 0.5 oz Cranberry Juice
- 1 t fresh lime juice
- 1 oz Vodka
- Lime slices for garnish
Carrots with Black Sesame and Ginger

Heat EVOO in large nonstick skillet set over high heat
- 2 T EVOO
- 2 t finely minced fresh ginger
- 4 large carrots cut into matchsticks (about 4c)
- coarse sea salt
- couple drops of hot toasted sesame oil
- 1 t soy sauce
- 1 T toasted black sesame seeds
BBQ Short Ribs: Slow Cooker

1. Spray slow-cooker bowl with nonstick cooking spray
- 5 pounds short ribs
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 1 cup ketchup
- 1 cup unsalted beef broth
- 2 tablespoons sugar
- 2 tablespoons white vinegar
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dry mustard
- 1/4 teaspoon black pepper
- Mashed potatoes and sauteed Swiss chard (optional)
Chocolate Marble Bread with Ganache

Preheat oven to 350 degrees
- 8 ounces (2 sticks) unsalted butter, softened, plus more for pan
- 1 1/4 cups all-purpose flour, plus more for dusting
- 1/2 teaspoon salt
- 3/4 teaspoon baking powder
- 8 ounces semisweet chocolate, coarsely chopped
- 2/3 cup plus 2 tablespoons sugar
- 4 large eggs
- 1/2 cup whole milk
- 1/4 cup heavy cream
Strawberry and Pretzel Surprise

1. Heat oven to 350 degree F
- Crust:
- 2 cups crushed pretzels (4 cups uncrushed)
- 6 tablespoons unsalted butter, melted
- 3 tablespoons sugar
- Filling and Topping:
- 1 8 ounce package cream cheese
- 1 cup sugar
- 1 10 ounce package frozen whipped topping, thawed
- 2 3 ounce packages strawberry-flavored gelatin
- 2 cups boiling water
- 1 16 ounce package frozen strawberries, thawed
Mixed-Mushroom and Scallion Pizza

Step 1 Preheat oven to 475 degrees
- 1/3 recipe Basic Pizza Dough, or 3/4 pound store-bought dough
- 1/3 cup grated Parmigiano Reggiano
- 3 scallions, trimmed and halved lengthwise
- 3 cups mixed mushrooms, such as portobello, cremini, button, and beech, stems removed, caps thinly sliced (about 8 ounces)
- Extra-virgin olive oil
- Coarse salt
Butternut Squash Risotto

1. Fill a pot with a steamer basket with 2 inches of water and turn heat to high
- One butternut squash 1 – 1 1/2 lbs or 12 oz frozen cubed butternut squash or 1 – 1 1/2 cup frozen butternut squash puree
- One 32-ounce container (4 cups) chicken broth
- 2 tablespoons extra-virgin olive oil (EVOO)
- 1 small onion, finely chopped
- 2 cloves garlic, grated or finely chopped
- 2 cups Arborio rice
- 1 cup dry white wine
- Nutmeg
- Salt and pepper
- 1 cup grated Parmesan, Romano & Asiago cheese
- 2 tablespoons butter, cut into small pieces
- 10 leaves fresh sage, slivered

- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 3/4 cup soy flour or all-purpose flour
- 1 1/2 cups old-fashioned rolled oats
- 1/2 cup unsweetened coconut flakes, toasted, or an additional 1/2 cup oats

- 1 1/2 cups milk
- 1 1/2 ounces Gruyere cheese or finely shredded Parmesan cheese (1/3 cup)
- 1/4 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon crushed red pepper (optional)
