Green Pesto Sauce

In a food processor or blender combine all ingredients
- 1/2 cup refrigerated green juice blend (such as Naked Green Machine)
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 1/2 cups firmly packed fresh flat-leaf Italian parsley
- 1/2 cup firmly packed fresh basil leaves
- 1/2 cup pine nuts, toasted
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, sliced
- 1/2 teaspoon salt
Gingerbread Pancakes with Pears and Yogurt

Combine the pancake mix, ginger, cinnamon, and salt in a large bowl
- 1 cup pancake mix
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1 egg
- 3/4 cup whole milk
- 3 tablespoons molasses
- 1 tablespoon vegetable oil
- 2 ripe Anjou or Bartlett pears, peeled, cored, and thinly sliced
- 1 tablespoon light brown sugar
- vanilla yogurt
Gnocchi all'Amatriciana

1. Heat oven to 350 degrees F
- 4 ounces pancetta, diced
- 1 large onion, diced
- 4 cloves garlic, sliced
- 1/2 - 1 teaspoon red pepper flakes
- 1 28 ounce can crushed tomatoes (such as Cento)
- 1/4 cup plus 2 tbsp grated or shredded Pecorino Romano cheese
- 1 teaspoon chopped fresh thyme
- 2 17 1/2 ounce package potato gnocchi (such as De Cecco)

- 1 15 ounce container part-skim ricotta cheese
- 2 10 ounce package frozen spinach, thawed and squeezed dry
- 1/4 teaspoon salt
- 1/2 cup jarred sliced roasted red peppers, drained
- 2 cups shredded part-skim mozzarella cheese
- 1/2 cup grated Parmesan

- 3/4 c sugar
- 3/4 c water
- 1 t lemon juice
- 1 pinch salt
