Ginger Chicken Stir-Fry with Asparagus and Shiitake Mushrooms

Coat chicken with 1/4 cup of the flour
- 1 lb boneless skinless chicken breasts, cut into 3/4 inch chunks
- 1/4 c flour
- 1 c chicken stock
- 1/4 c honey
- 1/4 c soy sauce
- 1 t ground ginger
- 1/2 t garlic powder
- 1/4 t crushed red pepper
- 2 T vegetable oil, divided
- 1 lb asparagus, trimmed and cut into 1 inch pieces
- 1 small onion, cut into thin wedges
- 16 medium shiitake mushrooms, sliced
Grilled Tilapia with Banana Black-Bean Salad

1. In a large bowl, combine beans, bananas, onion, jalapenos, lime juice, cilantro and 2 t chili powder
- 1 c plus 2 T black beans
- 2 semi-firm bananas (some green still showing) peeled and chopped
- 1 small red onion, chopped (1 c)
- 3 small jalapeno peppers, seeded and chopped
- Juice of 1 lime
- 2/3 packed cup fresh cilantro, chopped
- 2 t chili powder, divided
- Olive oil for coating grill
- 6 6-oz tilapia fillets
- 1 t sea salt
- fresh black pepper to taste
Spinach and Strawberry Salad with Orange Poppyseed Dressing

Whisk dressing ingredients together in a small bowl
- Dressing
- 1/2 c nonfat plain yogurt
- 1/4 c orange juice concentrate, thawed
- 2 T poppy seeds
- 1 T honey
- Salad
- 3 1/2 c baby spinach leaves
- 4 large strawberries, quartered
Flourless Anything Crumble

Preheat oven to 400. Toss fruit in a shallow baking dish with 2 T maple syrup and lemon juice
- 4 c fruit (peeled and sliced stone fruit, berries, whatever)
- 4 T good quality maple syrup, divided
- 1 T freshly squeezed lemon juice
- 1/2 c almond meal (or grind 1/2 c of blanched almonds in a powerful blender until they're powdery)
- 1/2 c quinoa flakes
- pinch of fine sea salt
- 1/2 t ground cinnamon (or any dessert spice, try cardamom and clove with chopped pears, for example)
- 2 T EVOO
Watermelon Gazpacho

- 3 c diced and seeded watermelon
- 1 c diced seedless cucumber
- 1 c chopped romaine lettuce
- 1/2 t white balsamic vinegar
