Southern Cornbread Recipe

1 Put the bacon fat in a 9 or 10-inch cast iron skillet and put the skillet into the oven

- 2 cups cornmeal OR 1 1/2 cups cornmeal and 1/2 cup flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 Tbsp sugar (optional)
- 1 1/4 cups buttermilk
- 1 egg (optional)
- 6 Tbsp unsalted butter, melted
- 1 Tbsp bacon drippings

- 1 cup beef consumme
- 1/2 cup soy sauce
- 1/3 cup brown sugar or honey

- 3 garlic cloves, minced

- 2 tablespoons cooled sauce from the crock pot after being cooked
- Fresh broccoli florets (as many as desired)
- Hot cooked rice (brown rice, or riced cauliflower)
Coq au Vin Recipe

1 Blanch the bacon to remove some of its saltiness
- 1/2 lb bacon slices
- 20 pearl onions, peeled, or 1 large yellow onion, sliced
- 3 lbs chicken thighs and legs, excess fat trimmed, skin ON
- 6 garlic cloves, peeled
- Salt and pepper to taste
- 2 cups chicken stock
- 2 cups red wine (pinot noir, burgundy, or zinfandel)
- 2 bay leaves
- Several fresh thyme sprigs

- 1 teaspoon ground cinnamon
- 1/2 cup butter, room temperature
- 1/4 cup honey
Cheesiest Potato Soup

In a large saucepan over medium heat, melt butter
- 2 tablespoons butter
- 1 cup diced onion
- 2 1/2 cups peeled and diced potatoes
- 3 cups chicken broth
- 1 cup heavy cream
- 1 3/4 cups shredded sharp Cheddar cheese
- 1/4 teaspoon dried dill weed
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1/8 teaspoon ground cayenne pepper
Quiche Lorraine

1a If you are making your own pie crust, roll out the pie dough into a 12-inch round
- 1 recipe pie dough (see Pâte Brisée recipe) or a prepared frozen pie crust
- 1/2 pound of bacon (you can use more or less to your taste)
- 1 cup milk
- 1/2 cup heavy cream
- 3 eggs
- 1/2 teaspoon salt
- Black pepper to taste (we used about 1/2 teaspoon)
- 1/8 teaspoon ground nutmeg
- 1 cup grated gruyere or other cheese (cheddar works too)

- 1-1/2 pound bacon, cooked, drained, crumbled, and divided
- 2 cups shredded mozzarella cheese
- 2 (8-ounce) packages cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 cup cheddar cheese (shredded) or to taste
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder (or to taste)
- 1 tablespoons mustard
- 2 cups chopped seeded tomatoes
- 1-1/2 cup shredded Iceberg lettuce

- 1 Tbsp bacon fat (optional)
- 1 Tbsp vegetable oil (if not using the bacon fat, use 2 Tbsp vegetable oil)
- 1 medium yellow onion, chopped
- 5 minced garlic cloves
- 1 smoked ham hock or ham shank
- 2 cups water
- 2 cups black coffee
- 1 1/2 cups tomato-based barbecue sauce
- 1/4 cup chopped pickled jalapeños (optional)
- Grated Cheddar or Monterey Jack cheese for garnish (optional)
- 1/4 cup chopped red onion for garnish (optional)
- Salt to taste

- 1 (9 inch) deep dish pie crust
