Cucumber Salad with Lime Vinaigrette

- 1 English cucumber sliced thinly
- 1 cup julienned carrot
- 1 TBL thinly sliced scallion
- 1 TBL chopped cilantro
- 2 TBL sesame oil
- 1 TBL rice wine vinegar
- 1 tsp lime juice
- 1 tsp toasted sesame seeds
Prime Rib

1 Remove roast from the refrigerator, loosely wrapped, 3 hours before cooking
- One standing rib roast, 3 to 7 ribs (estimate serving 2 people per rib), bones cut away from the roast and tied back to the roast with kitchen string (ask your butcher to prepare the roast this way)

- 2 cups white sugar
- 1/2 cup cocoa

- 2 cups mashed potatoes (prepared with milk and butter)
- 1/4 cup all-purpose flour
- 1/4 cup cream-style corn
- 1 egg, beaten
- 3 tablespoons finely chopped onion
- 1 teaspoon minced fresh parsley
- 1/2 teaspoon salt
- 1/2 teaspoon minced garlic
- 1/8 teaspoon pepper

Cocktail Meatballs

- 1 pound lean ground beef
