BACON WRAPPED WATER CHESTNUTS

1. Cut bacon into thirds, wrap each chestnut with bacon and use toothpick to secure

Tomato Pie

Preheat oven to 350°F. Place pie shell in oven and cook for 8-10 minutes or longer until lightly golden
- INGREDIENTS
- 1 9-inch pie shell (see pie crust recipe for homemade version)
- 1/2 yellow or red onion, chopped
- 3-4 tomatoes, cut in half horizontally, squeezed to remove excess juice, roughly chopped, to yield approximately 3 cups chopped tomatoes
- 1/4 cup sliced basil (about 8 leaves)*
- 2 cups grated cheese (combination of sharp cheddar and Monterey Jack, or Gruyere or Mozarella)
- 3/4 cup mayonnaise
- 1 teaspoon (or more to taste) of Frank's Hot Sauce (or Tabasco)
- Salt and freshly ground black pepper
- To slice basil, chiffonade them by stacking the leaves on top of each other, roll them up like a cigar, starting at one end slice the "cigar" crosswise in thin slices.
Old Fashioned American Goulash

Heat olive oil in a dutch oven over medium high heat
- 1 lb ground beef (I used 90% lean)
- 1 tsp olive oil
- 1 onion, chopped
- 1 bell pepper, chopped (whatever color you have on hand)
- 3 cloves garlic, finely chopped
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp Italian seasoning
- 1 tbsp Adobo Seasoning
- 2 bay leaves
- 1 tbsp low sodium soy sauce
- 1 2/3 cups water
- 1/2 cup beef broth
- 1 – 28 oz can crushed tomatoes
- 1 tablespoon tomato paste
- 1/2 cup frozen peas
- 1 cup elbow macaroni, uncooked
- 1 cup shredded Mozzarella Cheese
- 1/2 Cup Shredded Cheddar Cheese
Peppermint Bark Recipe

- 1 cup kiwi, sliced
- 1 cup apple, sliced
- 1 banana, sliced

Grandma’s Lemon Meringue Pie

Preheat oven to 350 degrees F (175 degrees C)
- 1 cup white sugar
- 2 tablespoons all-purpose flour
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 1/2 cups water
- 2 lemons, juiced and zested
- 2 tablespoons butter
- 4 egg yolks, beaten
- 1 (9 inch) pie crust, baked

LUBY'S CHEESE ENCHILADAS

CHILI SAUCE - IN A LARGE SAUCEPAN, HEATL OIL AND BROWN GROUND BEEF UNTIL COOKED
- 1/4 CUP VEGETABLE OIL
- 1 LB LEAN GROUND BEEF
- 1/2 CUP CHOPPED ONIONS
- 2 TSP GARLIC POWDER
- 1 TSP SALT
- 1 TSP PEPPER
- 1 CAN (14 1/2 OZ) WHOLE PEELED TOMATOES CHOPPED WITH JUICE
- 6 CUPS BEEF BROTH
- 3 TBL CHILI POWDER
- 2 TSP PAPRIKA
- 1 TBL GROUND CUMIN
- 2 TBL CORNSTARCH
- 2 TBL WATER
- 16 CORN TORTILLAS
- 6 CUPS SHREDDED CHEDDAR CHEESE
- 1 CUP CHOPPED ONIONS
- 1 CUP SHREDDED AMERICAN CHEESE
Tomato Vinaigrette

In a bowl, combine tomatoes, vinegar, oil, shallot, mustard, salt, and pepper
- 1 cup diced firm-ripe tomatoes (about 8 oz.)
- 1/4 cup red wine vinegar
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon minced shallot
- 1/2 teaspoon dry mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Filet Mignon with Red Wine Sauce

1 Your steaks should already be trimmed of the tough silverskin
- 2-4 filet mignon steaks, 1 to 2 inches thick*
- Salt
- Canola or grape seed oil
- 3-4 Tbsp unsalted butter, divided
- 2 cups full bodied red wine (we used a favorite Zinfandel)
- Black pepper to taste
- If you have thicker steaks, you can butterfly them and cook on the stovetop as directed here, or you can sear them on the stovetop and finish them in a 350°F oven for 10 minutes or more, until the center of the steaks are done to your liking.
