Sunny's BBQ Chicken and Pepperoni Dip

- Sunny's Coca-Cola BBQ Sauce:
- 1 teaspoon vegetable oil
- 1 ounce pepperoni (15 to 20 slices), coarsely chopped
- 16 ounces cream cheese, at room temperature
- 1 teaspoon Italian seasoning
- 4 scallions, white and green parts, finely chopped
- Kosher salt and freshly cracked black pepper
- 1 cup Sunny's Coca-Cola BBQ Sauce, recipe follows
- 1 rotisserie chicken, skin discarded, white and dark meat finely chopped (not shredded)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded Cheddar and Monterey Jack cheese blend
- For serving: any combination of bread sticks, pretzel sticks, crackers, toasted baguette slices, corn tortilla chips, carrot sticks, celery sticks and Granny Smith/red apple wedges
- 12 ounces Coca-Cola
- 1 1/2 cups ketchup
- 1/2 cup chopped white onion
- 2 tablespoons Worcestershire sauce
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon red pepper flakes
- 2 cloves garlic, grated on a rasp or finely minced
- Kosher salt and freshly cracked black pepper
Pork Tenderloin Stuffed with Prosciutto and Pears

In a saucepan bring pears, wine, sugar, lemon zest and bay leaf to a boil
- 2 firm Bosc pears, peeled, cored and quartered lengthwise
- 1 1/2 c. dry white wine
- 1 T. sugar
- 1 -by-3-inch strip lemon zest
- 1 bay leaf (Turkish type)
- 2 pork tenderloins (1 lb. each), silvery skin removed
- 8 thin slices prosciutto (about 6 oz.)
- olive oil
- 1 1/2 c. chicken stock
- Salt and freshly ground black pepper
- 2 t. cornstarch, dissolved in 2 T. cold water
Chili con Carne

In a large saucepan cook ground beef/turkey, onion, green pepper, and garlic till meat is brown
- 1 lb x-tra lean ground beef
- 1 cup chopped onion
- 1/2 cup chopped green pepper
- 2 garlic cloves , minced
- 1 (16 ounce) can tomatoes , cut up
- 1 (16 ounce) can dark red kidney beans , drained
- 1 (8 ounce) can tomato sauce
- 2 -3 teaspoons chili powder
- 1/2 teaspoon dried basil , crushed
- 1/4 teaspoon salt
- 1/4 teaspoon pepper

- 1 tablespoon vegetable oil
- 2 onions, chopped fine
- 1 garlic clove, minced
- 2 tablespoons tomato paste
- 2 tablespoons chili powder
- 1 tablespoon dried oregano
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon salt
- 3/4 teaspoon ground black pepper
- 1/4 teaspoon allspice
- 2 cups low sodium chicken broth
- 2 cups canned tomato sauce
- 2 tablespoons cider vinegar
- 2 teaspoons dark brown sugar

Broccoli Casserole (Sherry's)

blend together mushroom soup, cheddar cheese, mayo, onion, eggs
- 2 bags frozen broccoli florets thawed(or 3 bunches of broccoli crowns cooked in the microwav until firm tender)
- 2 Cans of cream of mushroom soup
- 2 cups of cheddar cheese
- 3/4 cup of Mayo
- 1 onion grated
- 6 large eggs or 4 (slightly beaten)
- sleeve of ritz crackers
- 2-3 tablespoons of melted butter
Chicken & Wild Rice Casserole

Mix the three cans of soup with 2 cups of milk and 1 stick of margarine in a saucepan
- 2 lb uncooked chicken breasts or chicken breast strips
- 10 3/4 oz. can condensed cream of mushroom soup
- 10 3/4 oz. can condensed cream of celery soup
- 10 3/4 oz. can condensed cream of chicken soup
- 2 cups milk
- 1 stick margarine (cut into chunks)
- 1 box Uncle Ben's long grain and wild rice (fast cooking recipe)
- grated Parmesan cheese to taste (I use about 1/2 can Kraft fat free grated Parmesan cheese)
- Cooking spray, if desired
German Potato Salad

Cook potatoes in boiling water until tender
- 8 whole red potatoes washed
- 1 small onion
- 1/4 lb. bacon
- 3 Tbl. vinegar
- 2 Tbs. flour
- 2 tsp. sugar
- 1 tsp. salt

- 2-3 pounds bone-in beef short ribs

Spinach-Cheese Swirls

1.Heat the oven to 400°F
- 1 1 1 egg
- 1 1 1 tablespoon water
- 1/2 1/2 1/2 cup shredded Muenster cheeseor mozzarella cheese
- 1/4 1/4 1/4 cup grated Parmesan cheese
- 1 1 2 green onion, chopped (about 2 tablespoons)
- 1/8 1/8 1/8 teaspoon garlic powder
- All-purpose flour
- 1/2 1/2 17.3-ounce of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet), thawed
- 1 1 10 package (about 10 ounces) frozen chopped spinach, thawed and well drained
- RECIPE TIPS
- to to results, make sure to remove as much liquid as you can from the spinach before adding it to the pastry. If it's too wet, it may make the pastry soggy.
- For a flavor twist, try a different cheese. Any shredded cheese will work in this recipe.
