Creamy Peanut Butter Pie

Add the cookies to the bowl of a food processor and pulse into fine crumbs
- 8 ounces chocolate cookies
- 4 tablespoons butter, melted
- 4 ounces finely chopped chocolate or semi-sweet chocolate chips
- 1/4 cup chopped peanuts
- 1 cup heavy cream
- 8 ounces cream cheese
- 1 cup creamy-style peanut butter
- 1 cup confectioner's sugar
- 1 – 14 ounce can sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 teaspoon freshly squeezed lemon juice
Creamy Mashed Potatoes

- 5 pounds Russet Or Yukon Gold Potatoes
- 3/4 cups Butter
- 1 package (8 Oz.) Cream Cheese, Softened
- 1/2 cups (to 3/4 Cups) Half-and-Half
- 1/2 teaspoons (to 1 Teaspoon) Lawry's Seasoned Salt
- 1/2 teaspoons (to 1 Teaspoon) Black Pepper
Tenderloin Sandwiches

- 2 whole beef tenderloins, trimmed (trimmed weight 2 1/2 to 3 1/2 pounds)
- 1/4 cup olive oil
- 1 cup crushed tri-colored peppercorns
- Dinner rolls, for serving
- Grainy brown mustard, for serving
- Horseradish sauce, for serving
Pumpkin Icecream Pie

PIE: Spread softened ice cream in pie shell and freeze until firm
- PIE:
- 1 baked 9" deep dish pie shell
- 1 qt. vanilla ice cream, slightly softened
- 1 c. canned 100% pumpkin
- 3/4 c. sugar
- 1/2 tsp. salt
- 1/2 tsp. cinnamon*
- 1/2 tsp. ground ginger*
- 1/2 tsp. nutmeg*
- (substitute 3/4 tsp. pumpkin pie spice)
- 1 c. heavy cream, whipped
- HARD SAUCE:
- 1/2 c. brown sugar
- 1/4 c. water
- 1/4 c. dark Karo syrup
- 1/2 tsp. vanilla
Oven Fries

Soak cut fries in cold water in refrigerator for about three hours
- 3 large baking potatoes, cut into 1/4-inch-thick matchsticks
- 2 tablespoons canola oil
- Salt
- Cooking spray
Fruit Crisp

Cook's Note: The ratio of crisp to fruit is fairly flexible--use more or less based on your preference
- Crisp:
- 1 part all-purpose flour (we used 1/2 cup)
- 1/2 part brown sugar (we used 1/4 cup)
- Pinch cinnamon
- Pinch salt
- 1 part cold unsalted butter in cubes (we used 1/2 cup)
- 1 part rolled oats (we used 1/2 cup)
- Fruit:
- 6 About 6 parts fruit (we used 3 cups sliced peaches, or about 8 peaches; see Cook's Note)
- 1 teaspoon cornstarch per 1 cup fruit (we used 3 teaspoons)
- Granulated sugar, depending on the sweetness/ripeness of the fruit
- Lemon zest, if desired
Rigatoni with Ricotta

Preheat oven to 425°F. In a small saucepot, heat EVOO over medium to medium-high heat
- 2 tablespoons EVOO – Extra Virgin Olive Oil
- 2 cloves garlic, finely chopped
- 1 32-ounce can San Marzano tomatoes
- 1 small onion, peeled and halved
- A few leaves of basil, torn
- 1 fresh bay leaf
- Salt and pepper
- 2 tablespoons butter
- 1 1/2 cups fresh sheep or cow’s milk ricotta cheese
- 3 tablespoons fresh thyme, finely chopped
- 1/4 cup flat-leaf parsley, finely chopped
- 1/4 cup mint, finely chopped
- 2 teaspoons lemon zest
- 1 ball fresh mozzarella cheese, shredded or cut into fine dice, divided
- 1 1/2 cups freshly grated Parmigiano-Reggiano cheese, divided
- 1/2 cup shelled spring peas, par-boiled 3-4 minutes, optional
Fettucini Alfredo (Betty's Kitchen)

Fill a medium to large pot one-half full of water
- 6 oz. uncooked fettucini noodles
- 1/2 pot of water, salted with 1 tablespoon salt
- 2 tablespoons butter
- 1/4 cup flour
- 12 oz. (1 1/2 cups) grated Parmesan cheese
- 1 1/2 cups milk (I use skim milk.)
- 1/4 teaspoon salt
- dry grated Parmesan cheese for sprinkling over the top to taste
- parsley for garnishing the top
Sunday Gravy

- Sauce:
- 1 pound link sweet Italian sausage
- 1 pound meaty pork ribs
- 1 recipe meatballs
- 1 recipe Braciole
- 1 large onion, diced
- 5 garlic cloves, pressed
- 1 Tablespoon fresh oregano, chopped
- 2 Tablespoons basil, chopped
- 6 teaspoons sugar
- 1 tsp. salt
- 3 28 ounce cans plum tomatoes
- 3 28 ounce cans crushed tomatoes
- 1 can filled with water
