Banana-Blueberry Baked Oatmeal

- 2 cups uncooked oatmeal, quick or old-fashioned
- 1/2 cup toasted and chopped walnuts
- 1/4 cup brown sugar, not packed
- 1 t baking powder
- 1 1/2 t cinnamon
- 2 cups skim milk
- 1 egg
- 2 T butter, melted and cooled slightly
- 2 t vanilla extract
- 1 1/2 cups blueberries, fresh or frozen (don't thaw)
- 2 bananas, peeled and sliced
Crock Pot Black Bean Soup

Wouldn't change a thing about this recipe!
- 1 16 oz. bag dried black beans
- 1 packet from a two-packet box of Lipton Recipe Secrets beef and onion soup/dip mix
- 5 cups water
- 1/2 lb. smoked pork sausage
- 1/2 each chopped carrot and celery
- 1/2 t salt
- 3 bay leaves
- 1 14.5 oz. can crushed tomatoes
- 2 t hot sauce
- Garnish: chopped green onions
Cantaloupe, Mozzarella and Prosciutto with Basil

Wonderful brunch 'antipasto' or summer app/side/salad on its own!
- 1 cantaloupe, halved and seeded
- 3/4 lb. bocconcini (bite-size mozzarella balls)
- 2 T EVOO
- 1/4 t red pepper flakes
- coarse salt and ground pepper
- 1/3 lb. prosciutto
- 1/4 cup torn fresh basil leaves
Pepper-Pepper Cheese Dip

This was REALLY good and surprisingly not too hot--
- 1 8 oz. package cream cheese, softened
- 2 cups shredded Cheddar cheese
- 2-3 (I used 3) jalapeno peppers, seeded and minced
- 6 slices bacon, cooked and crumbled
- 1/2 cup hot or mild pepper jelly, divided
- Tortilla chips, scoops, etc.
Beanie Weenie Casserole

Another mid-West white trash family favorite! Made it the first time for the kids, but the grownups ate it all!
- 1 pkg all meat hot dogs
- 3 cans pork and beans, drained
- 1/2 cup bottled BBQ sauce
- 2 T brown sugar
- 1 pkg corn bread mix (like Jiffy)
- 1/4 cup milk
- 1 egg
Cranberry Apple Crisp

- 6 Granny Smith apples
- 3 cups (12 oz. bag) fresh cranberries
- Juice of one lemon (about 3 T)
- 1 cup white sugar
- 1 cup white flour
- 1 cup rolled oats
- 1 cup packed dark or light brown sugar
- 1 t ground cinnamon
- 1/2 cup butter
Bloody Mary Flank Steak

Very delicious, a change from just grilling!
- 1 cup vegetable juice (I used spicy V8)
- 1/2 cup vodka
- Sea salt and freshly ground pepper
- 1 t hot sauce
- 1 T lemon juice
- 1 T Worcestershire sauce
- 1 to 2 cloves garlic, crushed
- 1 t onion powder
- 1 t celery seeds
- 1 T horseradish
- 1/4 cup EVOO
- 1 lb flank steak
