In a large bowl, combine the cucumbers, salt, and ice water
- 2 large cucumbers peeled, sliced
- 1 teaspoon salt
- 3 cups ice water
- 1/4 small red onion chopped
- 1/2 small green bell pepper chopped
- 1/4 cup reduced-fat sour cream
- 1 tablespoon white vinegar
- 1 tablespoon sugar
- 1/8 teaspoon freshly-ground black pepper
Chicken Ropa Vieja (Slow Cooker)

chicken breast with peppers and onions and lots of Latin flavor
- 3 (22.5 oz) chicken breast halves
- 1 small onion, quartered
- 1 tomato, quartered
- 1 carrot, peeled and chopped
- 2 cloves garlic, peeled
- 1 tbsp olive oil
- 1 small onion, thinly sliced
- 1 small green bell pepper, seeded and thinly sliced
- 1 small red bell pepper, seeded and thinly sliced
- 1/4 cup dry white wine
- 1/2 cup tomato sauce
- reserved broth
- 1 tsp cumin, or more to taste (I like a lot)
- garlic powder
- salt and pepper to taste
Broccoli Bites

Mix all the ingredients together in a large bowl
- 16 oz. package of frozen chopped broccoli, thawed and drained of liquid (I used fresh steamed broccoli)
- 1 1/2 cup of grated cheddar cheese
- 3 eggs
- salt & pepper
- 1 cup of seasoned Italian breadcrumbs
Chocolate Banana Wontons (Weight-Waters)

Preheat oven to 350°F. Coat a large baking sheet with cooking spray
- 2 servings butter-flavor cooking spray
- 1 large banana, diced
- 6 tbsp mini chocolate chips
- 24 wonton wrappers (half of 12 oz package)
- 1 tbsp powdered sugar

- 1 (12 ounce) package frozen shelled edamame (green soybeans)
- 1 tablespoon olive oil1/4 cup grated Parmesan cheese

- ■24 Tortilla Chips, plus additional for serving
- ■1 Tbs Chili Oil (or olive oil and red pepper flakes)
- ■1 Onion, chopped
- ■2 cloves Garlic, minced
- ■1 pound Ground Chicken
- ■2 Tbs Taco Seasoning
- ■1 can Black Beans, drained
- ■1 cup Salsa
- ■1 cup shredded fat free or reduced fat Cheese
- ■Optional: Other toppings such as jalepenios, olives, etc.

Chicken Parmesan Burger

In a medium bowl combine all of the ingredients for the burgers
- For the burgers:
- 1 lb. ground chicken
- 1/4 cup grated Parmesan cheese
- 1/4 cup bread crumbs
- 2 tsp. Italian seasoning
- 3 tbsp. chopped flat leaf parsley
- 1 clove garlic, minced
- 1 shallot, finely diced
- Salt and pepper
- For serving:
- Pasta sauce
- Mozzarella or provolone cheese (sliced or shredded)
- Sautéed mushrooms (optional)
- 4 hamburger buns
