Honey Beer Bread

Preheat over to 350F. Grease a 9″x5″x3″ loaf pan
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 2 tablespoons sugar
- 1 teaspoon salt
- 2 tablespoons honey
- 1 can beer
- 1/4 cup unsalted butter, melted
Creamy Avacado Yogurt Dip

Place the yogurt, avocados, garlic, cilantro, jalapeño, lime juice, and cumin in a blender or food processor
- 1/2 cup plain fat-free Greek yogurt (I use Chobani)
- 2 ripe avocados, peeled and seeded
- 1 clove garlic, minced
- 3 tablespoons chopped fresh cilantro
- 1 tablespoon finely chopped seeded jalapeño pepper
- 2 tablespoons fresh lime juice
- 1/4 teaspoon ground cumin
- Salt and ground black pepper, to taste
- Pita chips, tortilla chips, cut up veggies-for serving
Healthy Deviled Eggs

1. Cut 6 peeled, hard-boiled eggs lengthwise 2
- 6 hard boiled eggs
- 1/4 c fat-free plain Greek yogurt
- 2 tsp Dijon mustard
- 1/8 tsp kosher salt
- 1/4 tsp freshly ground pepper
- Paprika (or cayenne or cracked black pepper)
- Dill for garnish
Chicken Salad

Directions: 1. Mix chicken, celery, lemon juice, salt and pepper
- Ingredients:
- 2 cups cooked shredded chicken, cold
- 1 cup chopped celery
- 1 Tablespoon lemon juice
- Salt and pepper to taste
- 3/4 cup mayonnaise
- 2 hard-boiled eggs, chopped
Bacon-Wrapped Chicken Strips

- Ingredients:
- 1 pound boneless chicken breasts
- 20 thin bacon slices
- 3 tbsp honey
- 2 tsp coarse mustard
- fresh lemon juice
Blueberry Breakfast Cake

1. Preheat the oven to 350ºF
- 1/2 cup unsalted butter, room temperature
- 2 tsp. lemon zest or more — zest from 1 large lemon
- 7/8 cup* + 1 tablespoon sugar**
- 1 egg, room temperature
- 1 tsp. vanilla
- 2 cups flour
- 2 tsp. baking powder
- 1 tsp. kosher salt
- 2 cups fresh blueberries
- 1/2 cup buttermilk
- 7/8 cup = 3/4 cup + 2 tablespoons
- This 1 tablespoon is for sprinkling on top
Multi-grain Whole Wheat Pizza Muffin

- 1 cup whole wheat flour
- 1 cup robin hood multigrain flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1 tsp each salt and dried basil
- 1/2 tsp baking soda
- 1 cup tiny cubes old orange cheddar
- 1 cup cottage cheese, pureed smooth
- 2 eggs
- 1/4 cup butter, melted
- 1/2 cup finely chopped red or green sweet pepper
- 1/4 cup pizza sauce (about half a can)
- 1/2 cup shredded mozzarella
Pizza Buns

Heat olive oil in a skillet
- 1 1/2 lbs bread/pizza dough
- 2 tsp olive oil
- 1/2 onion, diced
- 2 cloves garlic, minced
- 4 oz. turkey pepperoni, diced
- 3/4 cup green olives, diced
- 1 cup pizza sauce
- 3 cups mozzarella cheese, divided
Hot Blueberry Cheddar Dip with Toasty Bread

Preheat oven to 375 degrees F
- serves 2-4
- 1 (8-ounce) block of cream cheese, softened
- 8 ounces white cheddar cheese, freshly grated
- 1/4 teaspoon nutmeg
- 1 heaping cup of fresh blueberries
- 1 loaf of french bread, sliced
- 2-3 tablespoons olive oil
Simple Shrimp Tacos

Heat tortillas over medium heat in a dry skillet until warm and starting to form small brown spots
- 1 lb of frozen shrimp, defrosted, peeled, & deveined
- 6 oz fat free Greek yogurt
- 1/4 cup chopped cilantro
- 2 tbsp fresh lime juice
- 1/2 tsp cayenne pepper
- 1/2 a head of cabbage, thinly sliced (about 5 cups)
- 8 corn tortillas
- 4 tsp extra virgin olive oil
- Salt and pepper to taste
