Lime and Coconut Chicken

1.Trim fat from chicken breasts
- serves 4, prep 10 minutes, marinade up to 2 hours, cook 15 min, adapted from Fine Cooking, Winter 2006
- 2 lbs boneless, skinless chicken breasts
- 3 tbsp oil
- zest of 1 lime
- 1 tsp ground cumin
- 1 1/2 tsp ground coriander
- 2 tbsp soy sauce
- 1 1/2 tsp kosher salt
- 2 tbsp sugar
- 2 tsp curry powder
- 1/2 cup coconut milk
- pinch cayenne
- 1 small fresh hot chili, such as Thai or Serrano, minced (optional)
- 1/4 cup chopped fresh cilantro
- Fresh limes, cut into wedges

- Ingredients
- 1 cup dry quinoa, rinsed
- 1 tbsp olive oil or coconut oil
- 1 3/4 cup water
- 1 can black beans, drained and rinsed
- 1 avocado, chopped into chunks
- handful cherry tomatoes, quartered
- 1/2 red onion, diced
- 1 small clove garlic, minced
- 1 red bell pepper, chopped into chunks
- small handful cilantro, diced
- 1 limes, juiced
- 1/2 tsp cumin
- 1/2 tbsp olive oil
- salt, to taste
Buffalo Chicken Quinoa Salad w/Broccoli

1.In a fine-mesh strainer, rinse quinoa well and drain

- 1 cup quinoa
- 2 cups water
- 3/4 pound boneless skinless chicken breast, cut into bite size pieces
- 1 cup broccoli florets
- 3/4 cup shredded carrots
- 3/4 cup shredded cabbage
- 1/2 cup blue cheese crumbles, plus more for garnish
- 4 green onions chopped, save half for garnish
- Dressing
- 1/2 cup olive oil
- 1/2 cup hot sauce (I recommend Franks)
- 1 teaspoon seasoned salt
Queso Chicken Pasta

Heat the oven to 350 F and spray a medium casserole dish with non-stick spray
- 8 ounces penne pasta
- 2 teaspoons vegetable oil
- 1 cup diced onion
- 2 cloves garlic, minced
- 1 jalapeno, minced
- 1/2 teaspoon cumin
- 1/4 teaspoon coriander
- 1 tablespoon flour
- 1 1/3 cup milk, 2% or higher
- 1 teaspoon salt
- 3 tablespoons cream cheese
- 6 ounces colby-jack cheese, divided
- 1/2 cup drained Ro*Tel tomatoes
- 2 cups cooked shredded chicken
Spaghetti Squash Au Gratin
