CRISPY FISH FILLETS

In a small bowl, beat the egg, mustard, and salt
- 1 Egg,
- 2 Tbsp Prepared Yellow Mustard
- 1/2 tsp Salt
- 1 1/2 cup Instant Mashed Potato Flakes
- 1/4 cup Oil, for frying
- 4 Fish Fillets
- 1/2 Lemon
- 1/4 cup Chives, finely chopped
- Parmesan Cheese

Cut shortening in flour and salt, add water
- Crust:
- 2 c flour
- 2/3 c crisco
- 1/2 tsp salt
- 1/2 c cold water
- Filling:
- 3/4 # ground chuck
- 1/2 c onion, chopped
- 1/2 c grated beef suet (edible) with lean steak only (ground chuck doesnt' need suet)
- 3 c diced potato's
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 2 TBS parsley or 1/3 c fresh parsley
- 1/2 c grated rutabaga or carrot
Pumpkin Bread

1. In a large bowl crean together first 4 ingredients
- 1/2 c sugar
- 1/2 c vegetable oil
- 3/4 c canned pumpkin
- 2 eggs
- 1 1/2 c flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 c raisins (optional)
- 1/2 c nuts (optional)
OLD FASHIONED, TRADITIONAL SASKATOON PIE

1. Gently toss together your Saskatoons, sugar and cornstarch/crushed Tapioca, until the berries are coated
- 4 cups of Saskatoon berries
- 1/2 cup of white sugar
- 1 tsp extra white sugar
- 2 1/2 tbsp cornstarch
- pie crust for one 9 inch pie
- 1 egg for brushing the top
- Option #1 - add 2 tbsp chilled, diced butter on top of the Saskatoons before placing the top crust. If you want to make it vegan, omit butter and egg & use all vegetable based crust, very easy.
- Option #2 - use crushed Tapioca/Minute Tapioca instead of cornstarch! This was my Grandma's trick sometimes to change it up. Delish!
- Option #3 - add in tbsp of lemon zest
Whole Wheat Bread

Mix together the first three ingredients in your mixer with a dough hook (we both use and love our Bosch for this)
- 7 c. whole wheat flour (grind your own with your Wondermill)
- 2/3 c. vital wheat gluten (buy at Honeyville)
- 2 1/2 T. instant yeast (we like the SAF brand)
- 5 c. hot water (120-130 F)
- 2 T. salt
- 2/3 c. oil
- 2/3 c. honey or 1 c. sugar (we like honey the best!)
- 2 1/2 T. bottled lemon juice
- 5 c. whole wheat flour
Belgian Waffles

1 Mix together flour, egg yolks, sugar, salt and the milk until you obtain a dough without lumps
- 1/2 liter milk
- 8 eggs, separated
- 250 g butter
- 150 g sugar
- 500 g flour

1. Grease and flour 2 loaf pans
- 3 whole eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 teaspoon vanilla
- 3 cups flour

- 1 teaspoon salt

- Topping mix
- 1/2 cup sugar
- 1 tablespoon cinnamon
- 2 teaspoons flour
- 1/4 cup butter or 1/4 cup margarine
Pistachio Mallow Salad

Stir pudding mix, pineapple with juice, nut and 1 c marshmellows in a large bowl until blended
- 1 (4oz) pistachio flavor instant pudding
- 1 can crusted pineapple in juice, undrained
- 1/2 c walnuts, chopped
- 3 1/4 c miniature marshmellows, divided
- 2 (8oz) tubs cool whip, thawed
Almond Lover's Trail Mix

- 1 cup cocoa-dusted almonds
- 1 cup dry-roasted almonds
- 1 cup pitted dried dates, chopped
- 1 cup raisins (golden or regular)
- 1 cup prunes, chopped
- 1 cup dried apricots, chopped

- 3 TBL melted butter or live oil
- 1 tsp garlic powder and a pinch of salt or 1/2 tsp garlic salt
- 1 tsp dried parsley flakes
