Cranberry Chutney Relish

Holiday cranberry sauce
- 1 pkg. 12 oz. of fresh cranberries
- 1 orange - peeled and chopped
- 1/4 cup orange juice
- 1 3/3 cups sugar
- 1 large golden delicious apple peeled, cored and chopped
- 1/2 cup golden raisins
- 1 tbls. apple cider vinegar
- 1/2 tsp. ground ginger
- 1/2 tsp. ground cinnamon
Bread - Irish Soda Bread

- 4 cups flour
- 1 cup sugar
- 1 tsp baking soda
- 1 tsp salt
- 1/2 box raisins

Vegan Crockpot Chili

This is a basic meatless chile for making in the crockpot
- 2 tbsp. oil
- 4 gloves garlic, minced
- 1 onion, chopped
- 2 stalks celery chopped
- 1/3 tsp red pepper flakes
- 1 tsp oregano
- 1 can 28 0z. can tomatoes
- 1 tsp soy sauce
- 1 tbsp. chile powder
- 1/3 tsp cumin
- 1 1/2 cups vegetable broth
- 1 can 6 oz. tomato paste
- 2 cans black beans, drained
- 2 cans red kidney beans, drained

Cheese Fondue

Great basic cheese fondue recipe that is quick and easy to make, but feels so special! Perfect for a small party
- 1/2 pound Swiss-style cheese such as Jarlsberg or Emmenthaler, shredded
- 1/2 pound Gruyere cheese, shredded
- 2 tablespoons flour, or cornstarch
- 1 garlic clove, halved crosswise
- 1 cup dry white wine, such as Sauvignon Blanc
- 1 tablespoon lemon juice
- 1 tablespoon Kirsch (cherry brandy)
- 1/2 teaspoon dry mustard
- Pinch of freshly grated nutmeg
- Assorted dipping foods such as cubed day-old French bread (skip for gluten-free version), cubed ham (skip for vegetarian option), blanched broccoli, carrots, or cauliflower, cherry tomatoes, chopped green bell peppers, peeled and chopped apples or pears

Curried Spinach with Tofu Paneer

Directions: 1. Heat veggie oil on medium heat in a large skillet
- Ingredients (use vegan versions):
- oil, as needed
- 2 tablespoons nutritional yeast
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon vegan parmesan, optional
- 2 tablespoons water
- 1/2 teaspoon spicy brown mustard
- 1/4 pound extra-firm tofu, drained and cubed (should still be soft when cooked)
- 1/2 tablespoon curry powder
- 3-4 cups baby spinach
Fish Casserole - Paul's Recipe

1. Coat the bottom of a 3 quart casserol with olive oil 2
- 1 lb box mini penne pasta
- 1 small can mushrooms
- 1/2 small onion chopped
- 1/2 tbls parsley
- 1 1/2 tbls tarragon
- 1/2 bag frozen peas
- 1/2 bad shredded cheddar cheese
- 1/2 fillet striped bass (cooked and shredded)
- bread crumbs
- butter
- white wine
- olive oil

1. Cook lasagna noodles according to package directions
- dried lasagna noodles (9 or 10 noodles)
- 2 eggs, beaten
- 2 cups cream-style cottage cheese
- 1 15 ounce carton ricotta cheese
- 2 teaspoons dried Italian seasoning, crushed
- 2 cups sliced fresh mushrooms
- 1 cup chopped onion (1 large)
- 4 cloves garlic, minced
- 2 tablespoons olive oil or cooking oil
- 2 tablespoons all-purpose flour
- 1/2 - 1 teaspoon black pepper
- 1 1/4 cups milk
- 1 10 ounce package frozen chopped spinach, thawed and thoroughly drained
- 1 10 ounce package frozen chopped broccoli, thawed and thoroughly drained
- 1 cup shredded carrot
- 3/4 cup shredded Parmesan cheese (3 ounces)
- 1 8 ounce package shredded mozzarella cheese (2 cups)
Lasagna - Eggplant (meatless)

Slice eggplant thinly Combine oil with herbs and brush both sides of eggplant
- 1 eggplant (about 1 1/4 lb)
- 1/2 cup olive oil
- 2 cloves garlic, minced

- 2 tsp fennel seed
- 8 oz. mozzarella cheese
- 15 oz ricotta cheese
- 2 cups spaghetti sauce (approx 16 ozs)
- 1 1/2 cups pitted tipe olives - halved
