Quinoa - Apple Salad

1.Combine all ingredients in a large bowl and toss until well combined
- 2 cups cooked quinoa
- 2 apples, cored and diced
- 1/3 cup dried unsweetened cherries or cranberries
- 1/4 cup walnuts
- 1/4 cup fresh chives, chopped (If you don't have chives green onions would be nice)
- 1/4 cup prepared Orange Dijon Dressing or Balsamic Vinegar Dressing
Salad - Simple Spring

In a medium bowl whisk together the juice of 1/2 orange, lemon juice, most of the red onion, olive oil, and salt
- 1 and 1/2 orange, juice only
- 1/2 lemon, juice only
- 1/2 small red onion, chopped
- 1/4 cup extra virgin olive oil
- 1/8 teaspoon fine grain salt
- 4 big handfuls of salad greens, washed and dried
- 1/2 cup walnut halves, toasted
- 1/3 cup black olives, (the wrinkly, oily ones), pitted
Potatoe - Gruyere Mashed

Place the potatoes in a pan, cover with water
- 2 lbs potatoes - peeled and cubed
- 1/2 cup sour cream
- 1/3 cup milk
- 1/4 cup butter, cubed
- 1/4 cup shredded Gruyere or Swiss cheese
- 1/4 cup chopped green onions
- 1/4 cup minched chives
- 1 tsp minced garlic
- 1/2 tsp garlic salt
- 1/4 tsp pepper
Cucumber, Chickpea, Tomato Salad

Place the tomatoes, cucumbers, chickpeas and feta cheese into a medium bowl
- 4 medium tomatoes, diced or quartered cherry tomatoes
- 1 large cucumber, halved, seeded and diced
- 1 (15 ounce) can chickpeas, drained and rinsed
- 1/4 cup white balsamic vinegar
- 1 tablespoon extra virgin olive oil
- 1 teaspoon fresh oregano leaves, lightly chopped
- 1 teaspoon fresh tarragon leaves, lightly chopped
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper

- 1/2 cup fresh cilantro (can substitute parsley)
Turkey London Broil

- 1 cup Earth Balance margarine (at room temperature)
- 1 tablespoon grandma's molasses
- 2 teaspoons vanilla extract
- 2 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cup semi-sweet chocolate chips
Five Bean Bake (vegan)

- 1 large sweet onion chopped
- 1 clove of garlic, minced
- 3/4 cup ketchup
- 1/2 cup molasses
- 1/4 cup brown sugar packed
- 1 tbls. dry or yellow mustard
- 1 tbls. Worcestershire sauce
- 5 cans 15 ozs, each of beans well drained: ( I use one can of red kidney, 1 can lima, 1 can garbanzo, 1 can Great Northern and 1 can butter beans)
