Squash - Mashed Baked Butternut Squash with Pears

1.Preheat the oven to 375 degrees F
- 44 tablespoon(s) unsalted butter
- 11 vanilla bean
- 11 tablespoon(s) brown sugar
- 22 teaspoon(s) ground ginger
- Coarse salt and freshly ground black pepper
- 1large1 large (1-pound) butternut squash
- 22 Bosc or Anjou pears
- Directions
- 11 .Preheat the oven to 375 degrees F.
- 44 .Scoop flesh out of the squash and discard the skin. Place the squash and pears in a large bowl and mash with a fork or a potato masher. Stir in the remaining melted butter mixture. Season with salt and pepper, to taste, and serve warm.
Appetizer - Artichoke Dip (warm)

- 1 cup mayo
- 3 tbls milk
- 1 cup parmesean cheese

A pull apart appetizer recipe
- 1 can (8 oz) Hunts tomato sauce with Basil, Garlic and Oregano - divided
- 1 1/4 cups shredded mozzarella cheese
- 1/2 cup chopped pepperoni slices
- 1 pkg ( 13.8 oz) refrigerated pizza dough crust
- 1 tbls melted butter/margarine
- 1 tbls grated Parmesan cheese
- 1/4 tsp. garlic powder
- Optional sprigs of Rosemary
Quinoa Stuffed Peppers (vegan)

A warm and comforting vegan dish that is protein and fiber rich
- 1/2 cup dry quinoa
- 1 cup water
- 4 bell peppers (slice in half lengthwise, remove seeds and white pith)
- 1 tbls. coconut oil
- 1 small onion chopped
- 1 clove of garlic minced
- 1 cup chopped mushrooms(optional)
- 1 zucchini, chopped
- 1 can (15 ozs) cannellini beans
- 1 cup marinara sauce
- salt and pepper to taste

Vegan Mango Cheesecake Bars

Sweet, tangy, tart and creamy - melt in your mouth goodness
- 1 1/4 cup graham cracker crumbs
- 1/8 tsp sea salt
- 1/4 cup coconut oil, melted
- 1 1/2 cup raw cashews, soaked for at least 6 hours
- 1/2 cup coconut cream (try SO Delicious Culinary Coconut milk)
- 1/2 tsp vanilla extract
- 2 Tbsp agave nectar or maple syrup
- 1/4 cup and 1 Tbsp lemon juice
- 2 cups fresh mango, diced
- 2 tsp arrowroot (can substitute corn starch)
- 1 Tbsp cool water

Casserole - Sausage and Peppers Penne

- 1 pound sweet Italian sausage (remove casing)
- 4 cloves minced fresh garlic
- 2 large peppers (can use green, red or yellow) cut in 1/4 inch strips
- 1 jumbo onion cut in half and then cut crosswise in 1/4 inch strips
- 1 pound white mushrooms sliced
- 1 can (28 oz.) whole tomatoes in puree
- 1 can (15 oz.)tomatoe paste

- 1 pound ziti or penne pasta
