Casserole - Chicken and Rice

Mix all ingredients and put in 9 x 13 inch dish
- 3 c. chicken breast (cooked and chopped)
- 2 c. cooked rice
- 2 c. chopped celery
- 1 c. chopped green pepper
- 1 chopped med. onion
- 1 sm. jar pimentos
- 1 can cream of chicken soup
- 1 can cream of celery soup
- 1/2 tsp. salt
- 1 c. mayonnaise or sour cream if planning to freeze
- 1 can water chestnuts, sliced and drained
- 1 pkg. slivered almonds, toast if desired
- 1 pkg. Pepperidge Farm Dressing mix or bread crumbs
Mac and Cheese

Simply delicious. Great for a crowd
- 1 box of pasta 16 ozs. (I use cavatappi pasta)
- 6 tbls. butter
- 41/2 tbls. flour
- 1 1/2 cups milk
- 3/4 cup light cream
- 1 cup sour cream (8 ozs.)
- 2 pkgs (8ozs each) Shredded Mac and Cheese Blend* from Giant supermarket)
- this is a blend of NY sharp cheddar, American and Swiss cheeses shredded
- 3/4 tsp salt
- 3/4 tsp onion powder
- 3/4 tsp garlic powder
- 1 cup butter crackers, crumbled
Beef Barley Stew

Brown meat, onion and garlic in 2 tbls
- 1 lb. beef cut into 1/4 in strips
- 1/2 cup finely chopped onion
- 1 clove minced garlic
- 1 10 1/2 opz can beef broth
- 1 cup water
- 1/2 cup pearled barley
- 2 tbls. ketchup
- 1 tsp paprika
- 1/8 tsp pepper
- 2 cups mushroom slices
- 1/2 cup sour cream
Cous Cous Salad from Linda

boil broth add cous cous -fluff after cooking add all other ingredients refrigerate
- 1 1/4 cup vegetable broth
- 1 pkg. cous cous
- 1 tsp lemon rind
- 1 tbls. olive oil
- 2 tbls lemon juice
- 3/4 tsp dijon mustard
- 1 cup quartered cherry tomatoes
- 1/4 cup chopped red onion
- 1/4 cup parsley
- 1 can 16 oz small white beans
Pasta - Mediterranean Pasta Salad with Kidney Beans

Cook pasta according to directions
- 8 oz pasta (farfalle works well)
- 1/4 cup water from cooking pasta
- 2 tbls olive oil
- 1 cup onion thinly sliced
- 2 large garlic cloves, thinly sliced
- 1 tsp crushed red pepper
- 8 cups fresh spinach (one 6 oz bag)
- 1 can (16 ozs) refdkidney beans, drained and rinsed
- 1/2 cup cherry tomatoes cut in half
- 1 tsp parmesean cheese (optional)
- 1 tbls fresh parsley
Salmon Cakes

Cheddar cheese and parsley add color and flavor to these tasty salmon cakes
- 1 (14.75 oz) can salmon drained and flaked
- 1 small onion minced
- 1 egg
- 1/2 cup breadcrumbs
- 1 tblsp. worchestershire sauce
- 1/8 tsp hot pepper sauce
- 1/4 tsp black pepper
- 1/4 cup shredded cheddar cheese
- 2 tblsp parsley
- 2 tblsp flour for coating the cakes
- 1/4 cup butter
- 2 tblsp olive oil

- 1 package (7 oz.) of tempeh
- 1 zucchini
- 1 red or orange bell pepper
- 1 yellow bell pepper
- 1 head of broccoli
- 1 onion
- 2 cloves garlic
- 1 Tbs. of olive oil (for sautéing)
- a dash of sesame oil (for flavoring)
- slivered or toasted almonds, pine nuts, or cashews

- 2 tbls lime juice
- 1/4 cup chopped cilantro
- 1 can rinsed/drained black beans
- 1/2 mango chopped
