Directions Start by putting the chicken in a pot and covering it with water

- One 2- to 3-pound chicken fryer, cut up
- 2 carrots, diced
- 2 celery stalks, diced

- Ingredients
- 4 sweet potatoes, peeled and cut into thin fries
- 1/2 stick butter, melted
- 4 tablespoons olive oil
- 2 teaspoons seasoned salt
- Ground pepper
- Minced fresh parsley
Roasted Potatoes and Sausage

PREPARATION Heat oven to 425°
- 1 pound smoked sausage, such as andouille or kielbasa
- 1 1/2 pounds gold or red potatoes, cut in 1- to 2-inch chunks
- 3 to 4 carrots, cut in 1-inch pieces
- 2 medium onions, cut into wedges
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon sea salt
- 1/2 teaspoon Cajun or Creole seasoning
- 1 large clove garlic, crushed and finely minced
- a few sprigs of fresh thyme, or about 1/2 teaspoon dried leaf thyme
- 2 tablespoons olive oil
- Yield: Serves 4.
Rigatoni and Cauliflower

Process, 1) Fill a large pot with water, sprinkle in some salt and bring to a boil

- Serves 4-6
- Prep time: 10 mins
- Cook time: 30 mins
- 1 Head of Cauliflower, core removed and florets cut into small pieces
- 3 Cloves of Garlic, minced
- 3 Tbsp of Olive Oil
- Pinch of Hot pepper Flakes
- 2 Cups of Chicken Stock
- 2 Tbsp of Fresh Chopped Parsley
- 1 cup of Freshly Grated Parmiggiano
- 12 oz of Short Rigatoni or any other short cut pasta
- 2 Tbsp of Unsalted Butter
- Salt and Pepper to taste
- For the Bread Crumb Topping:
- 1 cup of Fresh Breadcrumbs, made from a few slices of Italian bread
- 1 Tbsp of Fresh Chopped Parsley
- 2 Tbsp of Olive Oil
- 1/2 tsp of Fresh Lemon Zest
Homemade Chicken Stock

Combine all ingredients and 3 quarts of cold water in a large stockpot

- 1 medium onion, unpeeled, cut ito 1" pieces
- 2 celery stalks, cut into 1" pieces
- 6 sprigs flat-leaf parsley
- 1 tsp. whole black peppercorns
Apple Fritters

Directions Heat 1-inch vegetable oil on moderate to medium high heat
- Ingredients
- Vegetable oil, for frying
- 4 apples, Red or Golden Delicious or, 2 of each
- 2 teaspoons lemon juice (1 wedge will do)
- 2 cups complete pancake mix, any brand
- 1 1/2 cups water
- 1/2 teaspoon ground nutmeg, or equivalent of freshly grated
- 1/2 cup confectioners' sugar
Tahini Sauce

Preparation: In a food processor or mortar and pestle, combine garlic and tahini

- 1/2 cup tahini (sesame seed paste)
- 3 gloves garlic, crushed
- 1/2 teaspoon kosher salt
- 2 tablespoons olive oil
- 1/4 cup lemon juice
- 1 teaspoon parsley, finely chopped (optional)
