  • 3 cups chopped leftover roast turkey (skin removed)
  • 1 cup farfalline or other small pasta
  • Juice of 1/2 lemon
  • 1/4 cup chopped fresh dill and/or parsley (optional)

Process, 1) In a bowl, mix together all the ingredients for the meatballs and set aside for a few minutes

  • Ingredients:
  • Serves 4-6
  • Prep time: 15 mins
  • Cook time: 25 mins
  • 1 lb of Escarole, washed and chopped into bite size pieces
  • 2 Cloves of Garlic, minced
  • 3 Tbsp of Olive Oil
  • 2 15oz can of Cannellini Beans, drained and rinsed well
  • 7 cups of Beef or Chicken Stock or you can use a combination of both
  • I use chicken soup base in a jar according to directions
  • For the Meatballs:
  • 1 lb of Ground Pork, Beef and Veal Mix
  • 1 Egg
  • 1/3 cup of Freshly Grated Parmiggiano
  • 1/2 cup of Fresh Bread Crumbs
  • 3 Tbsp of Milk
  • 2 Tbsp of Freshly Chopped Parsley
  • Salt and Pepper, to taste
