Fried Artichoke Hearts

Mix beer, salt and egg Dip artichokes in beer batter then in flour Fry in hot oil for 5 mins
- 1/4 cup beer
- 1/4 teasp. salt
- 1 egg beaten
- 8 canned artichoke hearts
- 1/4 cup flour
- Canola oil
Tu rkey Escarole and Farfalline Soup

Directions Heat the olive oil in a Dutch oven or large pot over medium heat
- Ingredients
- 2 tablespoons extra-virgin olive oil
- 2 leeks (white and light green parts only), thinly sliced
- 3 stalks celery, chopped
- 3 carrots, chopped
- 2 parsnips, chopped
- 4 quarts turkey broth
- Kosher salt
- 1 small head escarole, chopped
- 2 wide strips lemon zest (removed with a vegetable peeler)
- 3 cups chopped leftover roast turkey (skin removed)
- 1 cup farfalline or other small pasta
- Juice of 1/2 lemon
- 1/4 cup chopped fresh dill and/or parsley (optional)
Escarole Soup

Process, 1) In a bowl, mix together all the ingredients for the meatballs and set aside for a few minutes
- Ingredients:
- Serves 4-6
- Prep time: 15 mins
- Cook time: 25 mins
- 1 lb of Escarole, washed and chopped into bite size pieces
- 2 Cloves of Garlic, minced
- 3 Tbsp of Olive Oil
- 2 15oz can of Cannellini Beans, drained and rinsed well
- 7 cups of Beef or Chicken Stock or you can use a combination of both
- I use chicken soup base in a jar according to directions
- For the Meatballs:
- 1 lb of Ground Pork, Beef and Veal Mix
- 1 Egg
- 1/3 cup of Freshly Grated Parmiggiano
- 1/2 cup of Fresh Bread Crumbs
- 3 Tbsp of Milk
- 2 Tbsp of Freshly Chopped Parsley
- Salt and Pepper, to taste

Shrimp Stir Fry

Directions Melt the butter with the olive oil in a large skillet over a medium-high heat

- 1 tablespoon olive oil
- 2 pounds jumbo shrimp, peeled and deveined, tails on
- 4 cloves garlic, minced
- 2 large zucchini, diced
- 2 large ears of corn, kernels removed
- 3/4 cup red grape tomatoes, sliced in half lengthwise
- 3/4 cup yellow grape tomatoes, sliced in half lengthwise
- Salt and freshly ground black pepper
- 12 to 18 fresh basil leaves, cut in chiffonade
- Parmesan shavings
- Juice of 1 lemon
- Rice or pasta, for serving, optional
Shrimp Scampi with Linguini

Directions For the pasta, put a large pot of water on the stove to boil
