Skillet Apple Pie

Directions For the skillet apple pie: Preheat the oven to 400 degrees F
- Skillet Apple Pie:
- Ingredients
- 1/2 cup (1 stick) unsalted butter
- 1 cup light brown sugar
- 2 refrigerated rolled pie crusts, such as Pillsbury
- One 21-ounce can apple pie filling
- 2 tablespoons cinnamon sugar
- Cinnamon Whipped Cream:
- 2 cups whipping cream, chilled
- 1 teaspoon ground cinnamon
- 4 tablespoons sugar
Roasted Buffalo Shrimp

1. Preheat oven 450 degrees
- Finely grated zest of 2 lemons (2Tbsp.) plus 2 Tbsp. fresh lemon juice
- 2 garlic cloves, minced
- 3/4 teasp. celery seeds
- 21/2 teasp. paprika
- 1/4 teasp. cayenne pepper
- Coarse salt
- 2 Tbsp. honey
- 3/4 cup extra virgin olive oil
- 11/2 lbs. large shrimp, peeled and deveined tails intact
- 1 cup sour cream
- 1/4 cup pale green celery leaves, finely chopped
Neeley's Turkey Rub

Mix all of the dry rub ingredients in a small bowl
- Holiday Rub:
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- 1 teaspoon dried sage
- 1/2 teaspoon garlic powder
Chicken Stock

Combine all ingredients and 3 quarts cold water in a large stockpot
- Makes 2 quarts
- 4 lb. chicken wings
- 1 medium unpeeled cut into 1" pieces
- 2 large carrots peeled cut into 1" pieces
- 2 celery stalks cut into 1" pieces
- 8 sprigs flat leaf parsley
- 1 teasp. whole black peppercorns
Bobby's BBQ Ribs

Directions In a small bowl, stir together all ingredients except the ribs

- 1 tablespoon paprika
- 1 1/2 teaspoons dark brown sugar
- 1 1/2 teaspoons finely grated orange zest
- 1 1/4 teaspoons salt
- 3/4 teaspoon ground cumin
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon cayenne pepper, to taste
- 4 pounds baby back ribs, cut into 2-rib portions
Louisiana Crunch Cake

Directions: Preheat oven to 350 degrees
- Cake:
- 3 c. cake flour
- 1 tsp. salt
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 2 c. granulated sugar
- 1 c. (2 sticks) butter...softened
- 1/4 c. sour cream
- 4 large eggs...room temp.
- 1 c. buttermilk
- 2 tsp. vanilla extract
- 1/4 c. white granulated sugar
- 1/4 c. sweetened coconut flakes
White Sauce

- 2 Tbsp. butter
- 2 Tbsp. flour
- 1/4 teasp salt
- 1/8 teasp white pepper
- 1 cup milk
Laura's Minestrone Soup

Process, 1) In a large soup pot, add the oil and preheat it over medium heat
- Ingredients:
- Serves 6
- Prep time: 10 mins
- Cook time: 20 mins
- 2 Tbsp of Olive oil
- 1 Bunch (about 5 or 6) Green Onions, white and light green parts only, chopped
- 1 Large Carrot, peeled and diced
- 2 Stalks of Celery, diced
- 1 Bunch of Asparagus, trimmed and chopped
- 2 Zucchini, diced
- 1 14oz can of Cannelini Beans, drained and rinsed
- 1 cup of White Wine
- 1 3” Piece of Parmiggiano Rind or just freshly grated Parmiggiano Reggiano
- 3 cups of Baby Spinach, washed, dried and roughly chopped
- 1/4 cup of Pesto
- 6 cups of Chicken Stock or Vegetable Stock
- 1/2 cup of Frozen Peas, defrosted
- 1 cup of Cheese and Spinach Tortellini or any other dried pasta
- Salt and Pepper, to taste

- 2/3 cup toasted slivered almonds
- 1 cup graham cracker crumbs
- 1/4 cup white sugar
- 1 pinch salt
- 1/4 cup butter, melted
- 4 egg yolks
- 1 (14 ounce) can sweetened condensed milk
- 1/2 cup key lime juice
- 3/4 cup cold heavy cream
- 1/2 teaspoon grated lime zest
