Easy Roast Pork

Preheat oven to 400°F. Line 13 x 9 x 2-inch roasting pan with foil
- Any leftovers are great added to the Tuscan Rice Salad or for sandwiches.
- Yield: Serves 8
- 4 large garlic cloves, pressed
- 4 teaspoons chopped fresh rosemary or 2 teaspoons dried
- 1 1/2 teaspoons coarse salt
- 1/2 teaspoon ground black pepper
- 1 2 1/2-pound boneless pork loin roast, well trimmed
- Fresh rosemary sprigs (optional)
Grilled Potato Skins

Directions Preheat oven at 350 degrees F
- Ingredients
- 2 large russet potatoes
- 4 tablespoons butter, melted
- Salt and pepper
- 1 cup shredded Cheddar
- 6 slices bacon, cooked and crumbled
- 1 cup sour cream
- 2 tablespoons prepared horseradish
- 3 tablespoons sliced green onions
- 1/2 cup chopped tomatoes
- Chopped chives, for garnish
- plates and top with the green onions, chopped tomatoes and the sour cream horseradish sauce. Sprinkle with chopped chives, for garnish
- Place potatoes on serving
Shrimp Stir Fry

Directions Melt the butter with the olive oil in a large skillet over a medium-high heat

- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 pounds jumbo shrimp, peeled and deveined, tails on
- 4 cloves garlic, minced
- 2 large zucchini, diced
- 2 large ears of corn, kernels removed
- 3/4 cup red grape tomatoes, sliced in half lengthwise
- 3/4 cup yellow grape tomatoes, sliced in half lengthwise
- Salt and freshly ground black pepper
- 12 to 18 fresh basil leaves, cut in chiffonade
- Parmesan shavings
- Juice of 1 lemon
- Rice or pasta, for serving, optional

Yukon Gold Potatoes, Jacque Pepin
