Butternut Squash Gratin

Process, 1) Preheat the oven to 400 degrees, butter a casserole dish and set aside
- Ingredients:
- Serves 6
- Prep time: 5 mins
- Cook time: 50 mins
- 2 Tbsp of Unsalted Butter
- 1 Tbsp of Oil
- 1 Large Onion, chopped
- 3 lb Butternut Squash, peeled, and cut into 1/2 cubes
- 1 Tbsp of Poultry Seasoning
- 2 Cloves of Garlic, chopped
- 1/2 cup of Milk
- 1/4 cup of Heavy Cream
- 3 Tbsp of Fresh Chopped Parsley
- 1 cup of Fresh Breadcrumbs
- 1/2 cup of Grated Parmiggiano (parmesan)
- Salt and Pepper, to taste
- 2 Tbsp of Melted Butter

Directions Preheat the oven to 400 degrees
- Ingredients
- 1 package (2 sheets) frozen puff pastry, defrosted
- 4 small (6 ounce) Granny Smith apples
- 3/4 cup sugar
- 6 tablespoons (3/4 stick) cold unsalted butter, small-diced
- 3/4 cup apricot jelly or warm sieved apricot jam
- 3 tablespoons Calvados, rum, or water
Perfect Eye Round Roast

Take out your roast, rinse it and pat dry with paper towels
- You’ll Need:
- Eye of Round Roast (2-8 lbs. preferred, we used a 3 lb. roast)
- 1 tsp kosher salt
- 1 tsp black pepper (coarse-ground preferred)
- 1/2 tsp dried thyme
- 4-6 cloves garlic, chopped finely
- Mix together your seasonings and set them aside.

Crispy Oven Baked Chicken

Wash chicken pieces and pat dry with a paper towel
- 1 chicken, cut in pieces
- 2 egg whites or 1 whole egg
- 1 cup seasoned bread crumbs or panko
- 1 cup all purpose flour
- 1 tbsp. freshly chopped parsley
- 1/4 tsp. each garlic and onion powder
- 1/2 tsp. paprika (optional)
