Mexican Deep dish pan pizza

Preheat oven to 400ºF. Mix 2 packages muffin mix together with eggs, melted butter and milk

- 2 8 1/2-ounce boxes corn muffin mix, such as Jiffy brand
- 2 eggs
- 4 tablespoons butter, melted (1/2 stick)
- 1 1/2 cups whole milk
- Extra-virgin olive oil (EVOO) or vegetable oil (1 turn of the pan)
- 1 tablespoon extra-virgin olive oil (EVOO) or vegetable oil, 1 turn of the pan
- 1 pound ground chicken
- 1 small yellow onion, finely chopped
- 1 medium zucchini, chopped
- 1/2 red bell pepper, chopped
- 1 jalapeño pepper, chopped
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 cup mild to medium taco sauce
- Salt, to taste
- 2 1/2 cups (one 10 ounce bag) shredded cheddar or jack cheese
- 2 small vine-ripened tomatoes, seeded and diced
- 2 tablespoons sliced green olives (salad olives), drained

Preheat oven to 350 degrees FahrenheitCombine flour, salt, baking soda, and cinnamon in a bowl

Mix the flour and some salt and pepper together on a large plate
- 1/2 cup all-purpose flour
- Salt and freshly ground black pepper
- 8 boneless, skinless chicken breasts, trimmed and pounded flat
- 1 pound thin linguine
- 1/2 cup olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 whole medium onion, chopped
- 3/4 cups chicken stock
- Three 14.5-ounce cans crushed tomatoes
- 1 tablespoon sugar
- 1/4 cup chopped fresh parsley, plus more for serving
- 1 cup freshly grated Parmesan, plus more if needed
- Basil chiffonade, for serving

Saute chicken in a pan with a little oil and with salt and pepper
- 1 box penne pasta (or less depending on who you are feeding)
- (I had to use "medium" shell pasta, because after I got done making the sauce, I realized that is all we had)
- 2 chicken breasts-shredded
- 1 1/2 cups of fresh spinach
- 2 cups marinara sauce (jarred or homemade)
- 1 cup heavy cream
- 1/2 teaspoon red pepper flakes (or less if you don't want it to spicy)
- 1/2 cup parmesan cheese
- 1 cup diced tomatoes (I used canned tomatoes)

Slice the strawberries into a bowl and sprinkle with one tablespoon of sugar

1. Combine cucumbers and salt in a large, shallow bowl; cover and chill 1 1/2 hours
- 5 1/2 cups (1 1/2 pounds) thinly sliced pickling cucumbers
- 1 1/2 Tablespoons kosher salt
- 1 cup thinly sliced sweet onion
- 1 cup granulated white sugar
- 1 cup white vinegar
- 1/2 cup apple cider vinegar
- 1/4 cup light brown sugar (packed)

- ■3 cups shredded cooked chicken
- ■1/4 to 1/2 cup hot sauce (to taste)
- ■3 1/2 ounces cream cheese, softened
- ■1 3/4 cups sharp shredded cheddar cheese
- ■1/4 cup chopped green onions
- ■1 cup all-purpose flour
- ■4 eggs, lightly beaten
- ■3 – 4 cups Corn Flakes cereal, crushed

- 4 ripe plum tomatoes, seeded and finely chopped
- 2 or 3 jalapeño peppers, seeded and finely chopped
- 1/2 cup fresh cilantro leaves, chopped
- 1 tablespoon limejuice

- 1 medium onion, finely diced
- 1 teaspoon seasoned salt
